Members Choice!!! Super easy to make with simple ingredients, this pineapple cake is going to become a go-to dessert. The cake is super moist and has a tropical feel with the pineapple. The trick is putting the cream cheese icing on the cake while it is warm. The icing then seeps into the cake and is the perfect sweet complement. We sprinkled the optional pecans and loved the crunch it adds. Garnishing each piece of the cake with coconut is wonderful... add as little or as much as you like. That this to a potluck and watch it disappear.

THERE IS NO BUTTER OR OIL IN THE CAKE, BUT SO AS NOT TO MISLEAD ANYONE, THERE IS BUTTER IN THE FROSTING
2 cup(s) all-purpose flour
2 cup(s) sugar
2 - eggs
1 teaspoon(s) baking soda
1 teaspoon(s) vanilla
1 pinch(es) salt
1 can(s) crushed pineapple (undrained) in its own juice - not syrup, 20 oz.
1 cup(s) chopped nuts, optional
CREAM CHEESE FROSTING
1/2 cup(s) butter or 1 stick
1 package(s) cream cheese, softened, 8 oz.
1 teaspoon(s) vanilla
1 1/2 cup(s) confectioners' sugar
- shredded coconut for garnish, optional

Steps:

  • Preheat oven to 350 degrees F.
  • Put all the cake ingredients into a large mixing bowl.
  • Mix all of the cake ingredients together.
  • Pour into a greased 9X13 inch pan.
  • Bake at 350 for 35 - 40 minutes (until the top is golden brown).
  • For the frosting: Beat butter, cream cheese and vanilla together until creamy.
  • Gradually mix in powdered sugar.
  • Blend until frosting is mixed well.
  • Frost cake with cream cheese frosting while still warm.
  • Sprinkle with chopped nuts, if desired.
  • Enjoy!

This is spinoff of Paula Deen's Gooey Butter Cake. This is very rich and a little goes a long way. I have had her gooey cake from QVC and it is very good. You can't eat much.

Cook Time 50 minutes

Yield 20-24 squares

Number Of Ingredients 10

1 (18 1/4 ounce) box yellow cake mix
1 large egg
1/2 cup melted unsalted butter
8 ounces softened cream cheese
2 large eggs
1 teaspoon pure vanilla extract
1 (16 ounce) box confectioners' sugar
1/2 cup melted unsalted butter
1 cup flaked coconut
20 ounces crushed pineapple, drained

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 13 by 9 by 2-inch baking pan.
  • For the cake: In the bowl of an electric mixer, combine cake mix, egg, and butter and mix well. Pat into bottom of prepared pan and set aside.
  • For filling: Still using an electric mixer, beat the cream cheese until smooth. Beat in the eggs and vanilla. Dump in confectioners' sugar and beat well. Reduce the speed and slowly pour in butter. Mix well. Fold in coconut and pineapple.
  • Pour filling onto cake mixture and spread evenly. Bake for 40 to 50 minutes.
  • Don't be afraid to make a judgement call on the cooking time, because oven temperatures can vary. You want the center to be a little gooey, so don't bake it past that point.
  • Remove from oven and allow to cool completely. Cut into squares.
