Cherokee Fry Bread | Just A Pinch Recipes image

Fry bread is made with minimal ingredients (no yeast) and is quite tasty. It's similar to a chewy flatbread and can be used in many ways. This bread is commonly used for an Indian Taco (a tasty twist on taco night). Set up a taco bar and everyone can make their own. We also loved it with honey drizzled on top. The idea for using it as pizza is something we're looking forward to trying. Anything you would put on a flatbread you can use this simple fry bread for.

Number Of Ingredients 6

3 cup(s) all-purpose flour
1 1/2 teaspoon(s) baking powder
pinch(es) salt
1 1/3 cup(s) warm water
- vegetable oil for frying
- honey

Steps:

  • Combine the flour, baking powder, and salt.
  • Add the water to the flour mixture.
  • Mix until combined.
  • Turn dough out onto a floured surface. Knead dough until soft.
  • If you have a 4" cutter, roll the dough out on a lightly floured board until 1/4" thick and cut out 4" rounds. If you don't have a big cutter, pinch off about a golf ball size of dough.
  • Roll or pat dough flat in a circle about 1/4 of an inch thick.
  • Drop dough into heated oil that is 1-2 inches deep (about 317 degrees). Fry until the bread puffs up.
  • Flip over. It is done when both sides are golden brown.
  • Drain on paper towels.
  • Serve with honey.
  • Or can use bread for tacos. Brown 1 lb ground turkey, add 1 chopped red bell pepper and a can of yellow corn to browned turkey. Add 1 package of taco seasoning and a touch of ketchup to taste. Serve on fry bread with lettuce, cheese, refried beans, tomatoes, etc.

I don't think any restaurant chain makes a better biscuit that Hardees. Unfortunately, the Hardees in our town closed and I rarely get one of their delicious biscuits ... unless I make them myself. This recipe is as close I can get to the real thing and it's the real deal.

Number Of Ingredients 7

5 cup(s) self rising flour
1 teaspoon(s) baking soda
2 teaspoon(s) sugar
1 cup(s) oil
2 cup(s) buttermilk
1 package(s) dry yeast
1/4 cup(s) warm water

Steps:

  • Dissolve yeast in warm water with sugar.
  • Mix all other ingredients together and add to yeast mixture.
  • Mix well in large bowl; cover and let set in refrigerator overnight.
  • Remove required amount from refrigerator and pat or roll out on floured surface.
  • Cut out with a biscuit cutter (or a round glass dipped in flour) and place on greased baking pan.
  • Bake at 425 degrees until golden brown (depends on your oven, start with 10-12 minutes).
  • Note: this dough will keep in the refrigerator for 1-2 weeks.

    1. Gently warm the milk in a pan till lukewarm or body temperature, 37ºC. Add the yeast and sugar and stir until the sugar is dissolved. Set aside for a few minutes until the mixture is creamy and starting to froth.
    2. Melt the shortening or lard, then in a large bowl, mix the yeast mixture, flour, shortening or lard and a pinch of sea salt into a soft dough. Add a little extra milk or flour, if needed.
    3. Knead until smooth and elastic. Transfer to a greased bowl, cover with clingfilm and set aside in a warm place to rise for 1 hour, or until doubled in size.
    4. Knock back the dough and roll out on a lightly floured surface to about 2cm thick. Using a round cutter or thin drinking glass, cut out circles of 5 to 8cm.
    5. Lightly sprinkle a piece of baking parchment with extra flour, or polenta (if using). Transfer the muffins to the paper and sprinkle over a little more flour or polenta. Cover with a tea towel and leave in a warm place for 45 minutes to 1 hour to rise.
    6. When ready to cook, preheat the oven to 170ºC/gas 3 and heat a heavy non-stick pan over a medium heat.
    7. Brown the muffins in the pan, in batches, for a few minutes each side, then turn the heat to low and cook for 10 minutes. Transfer to a baking tray and finish with 5 minutes in the oven, or until cooked through.
    8. Cool slightly on a wire rack then split open and spread with melted butter, or keep in an airtight tin, to split and toast as needed.

Beat the egg, in the bowl, combining it with the flour until it is dispersed through the flour. Measure the water into a saucepan, add the lard and put over a medium heat. As soon as the pan comes to the boil, remove it from the heat. Pour the hot liquid into the flour mixture while stirring. Using your hands gather the mix together to form a soft and smooth ball of dough. Cover and leave for 20 minutes. Pork Pie Filling Measure the sage, salt, mace and ground pepper into a small bowl and stir to combine. Finely grate the lemon rind into the bowl and stir to make the seasoning mix. Put the pork mince, sausage meat and chopped bacon into a mixing bowl and mix together well. Stir in the seasoning mix. Raised Pork Pie Pre heat the oven. Rub butter generously around the base and sides of a 15cm/6” round, loose bottom, deep cake tin or insert a baking liner. Take two thirds of the pastry and press it into the bottom and sides of the dish. Tip the pie filling into the pastry lined tin and smooth the top. Moisten the pastry rim with water. Lightly dust the work surface with flour, put the remaining dough in the middle and sprinkle it with more flour. Roll the pastry into a 15cm/6” circle. Brush a little water around the circumference of the pastry circle. Press a 3cm/1¼” cookie cutter or egg cup into the centre of the pastry and remove the small pastry circle. This will allow steam to escape during cooking. Transfer the pastry circle over the filled pie, inverting it so the moistened side is down. Press, pinch or crimp together the outside edges using your fingers or the flat prongs of a fork. Brush the remaining beaten egg over the top of the pie. Place the pie on an oven tray and bake for 70-80 minutes until golden. Allow the pie to cool completely in the tin. Carefully push and lift the cold pie out of the tin. Wrap the pie and refrigerate. Best eaten within 3-4 days.
