These cute and easy holiday almond cookies sparkle like freshly fallen snow!

1 roll (16.5 oz) refrigerated Pillsbury™ Sugar Cookie Dough
1/3 cup roasted blanched whole almonds
1/4 cup all-purpose flour
1/3 cup coarse sugar
1/2 cup powdered sugar
2 to 3 teaspoons milk
1/4 teaspoon almond extract

Steps:

  • Heat oven to 350°F.
  • Meanwhile, in food processor, place almonds. Cover; process with on-and-off pulses until finely ground.
  • In large bowl, break up cookie dough. Add flour and ground almonds; stir with spoon or hands until well blended. (DO NOT EAT RAW COOKIE DOUGH AFTER COMBINING WITH FLOUR.)
  • Shape dough into 38 (1-inch) balls. Roll balls in coarse sugar. Place 1 inch apart on ungreased cookie sheets.
  • Bake 9 to 12 minutes or until edges are set but not brown. Remove from cookie sheets to cooling rack. Cool completely, about 20 minutes.
  • In small bowl, stir powdered sugar, milk and almond extract, adding enough milk for desired drizzling consistency. Drizzle over cooled cookies.

2 packages (16 oz) refrigerated Pillsbury™ Ready to Bake!™ Sugar Cookie Dough (24 Count)
8 oz almond paste
2 tablespoons apricot preserves
1 cup Pillsbury BEST® All Purpose Flour
2 egg whites
1 1/4 cups sliced almonds

Steps:

  • Heat oven to 375°F. Line large cookie sheets with parchment paper.
  • In large bowl, break up cookie dough and almond paste. Add flour and preserves; knead until well blended and mixture forms a ball. (DO NOT EAT RAW COOKIE DOUGH AFTER COMBINING WITH FLOUR.) Pat into 6x9-inch rectangle. Cut into 24 pieces.
  • In small bowl, beat egg whites with fork or wire whisk until foamy. In another small bowl, place almonds.
  • Shape each dough piece into ball. Flatten to 3-inch round. Dip one flat side into egg whites, coating one side only. Place coated side down onto almond slices. Lightly press to coat with almonds. Place 2 inches apart on cookie sheets, almond side up.
  • Bake 13 to 18 minutes or until cookies are light golden brown. Cool on cookie sheets 2 minutes; remove to cooling racks. Cool completely, about 20 minutes. Store in covered container.

It's not "traditional," but when in Hawaii, you just gotta use macadamia nuts. But I like the a mix of pecans and walnuts the best if there are no mac nuts. These cookies are so simple to make and use basic ingredients and are a staple in my holiday goody containers. My nephews love to help me make these, because they know they get to make a mess when they roll them in powdered sugar. I like to make them bite-sized, since the big ones make a mess if you don't pop the whole thing in your mouth! The smallest cookie scooper I have is 25 mm, and they come out about less than half the size of a regular cookie scooper. The little guys bake for 7-8 minutes.

  • Pulse the almonds in a food processor until coarsely ground; set aside. In the bowl of a mixer fitted with the paddle attachment, cream the butter, vegetable oil, granulated sugar, powdered sugar, egg and almond extract on medium speed until fluffy, about 2 minutes. Add the flour, ground almonds, baking soda, salt and cream of tartar and mix well. Cover with plastic wrap and refrigerate the dough until firm, at least 1 hour or overnight. Scoop rounded tablespoonfuls of dough and roll into smooth round balls. Place 2 inches apart on 2 ungreased baking sheets. Refrigerate 1 hour before baking. Preheat the oven to 350 °. Bake the cookies until just barely turning brown, 14 to 16 minutes. (Don’t overbake!) Remove from the oven, then gently press the back of a measuring spoon into the center of each cookie to make an indentation. Remove the cookies to a rack to cool completely. Dust the cookies with powdered sugar. Whisk the raspberry jam until smooth. Spoon about 3/4 teaspoon jam into the center of each cookie.
