The perfect finale to a barbecue feast, this light and fresh Pig Pickin' Cake will be a new summer staple. Layers of yellow cake are stacked with a fruity mixture of whipped topping, pineapple, vanilla instant pudding, and pecans to form a cake that's as unique as its name. While nobody is quite sure where this cake earned its name, the Pig Pickin' Cake pays homage to the traditional Southern Pig Pickin', a hog roast that's essentially an early version of the barbecue. This light, fruity cake undoubtedly pairs well with a heavy, meaty meal.This cake uses ingredients you probably already have in your pantry, from boxed cake mix to canned pineapple, to create a dessert that's utterly unique. It's easy to make and an impressive offering to bring to a summer celebration. Leave the sides unfrosted to reveal all the creamy, fluffy goodness of the cake's thick layers. The fuss-free presentation earns this cake a spot at all of our casual cookouts and potluck parties this season.

Number Of Ingredients 10

1 (18.25-ounce) package yellow cake mix
1/3 cup water
1/3 cup vegetable oil
3 large eggs
1 (11-ounce) can mandarin oranges, drained
1 (15-ounce) can crushed pineapple, undrained
1 (3.4-ounce) package vanilla instant pudding mix
1 (12-ounce) container frozen whipped topping, thawed
1/2 cup chopped pecans
Garnish: chopped pecans

Steps:

  • Beat first 4 ingredients in a large bowl at medium speed with an electric mixer until blended. Stir in oranges. Pour batter into 3 greased and floured 8-inch round cakepans. (Layers will be thin.)
  • Bake at 350º for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool layers in pans on wire racks 10 minutes; remove layers from pan, and let cool completely on wire racks.
  • Stir together crushed pineapple and next 3 ingredients. Spread pineapple mixture evenly between layers and on top of cake. Chill cake 3 to 4 hours. Garnish, if desired. Store cake in refrigerator.

Smoked Pig Shots - Learn to Smoke Meat with Jeff Phillips image

If you're looking for a smoked appetizer that has super bowl party written all over it.. you've found it! A slice of sausage, wrapped in bacon and held secure with a toothpick to form a cup. The cups are filled with almost anything but my favorite is a cream cheese mixture containing chopped jalapeño, Jeff's original rub and grated cheese.

Prep Time 30 minutes

Cook Time 90 minutes

Number Of Ingredients 7

Smoked sausage links (Cut into ½ inch thick rounds. Polish kielbasa also works great.)
Bacon (thick cut and cut in half)
8 ounces cream cheese (softened on counter)
½ cup grate cheese (4 cheese Mexican blend works great)
2 tablespoons jalapeños (chopped)
2 TBS Jeff's original rub (divided)
Jeff's original barbecue sauce

Steps:

  • Make the cream cheese mixture by combining the softened cream cheese, ½ cup grated cheese, 1 tablespoon of Jeff's original rub and and 2 tablespoons of chopped jalapeños into a small to medium sized mixing bowl. Mix well.
  • Wrap the half pieces of bacon around the sausage slices and secure with a toothpick.
  • Fill the "cups" with the cream cheese but not all the way to the top. The bacon will shrink as it cooks.
  • Setup your smoker for indirect cooking at about 250-275°F or as close to this temperature as you can.
  • Place the pig shots on the smoker grate and smoke cook for approximately 90 minutes or until the bacon is cooked through and has good "bite-through" or texture.
  • When the appetizers are finished cooking, you can glaze with barbecue sauce if you like. I used my original barbecue sauce thinned with a little apple juice. Let the pig shots continue in the heat for about 10 minutes after cooking to allow the sauce to set.
  • Serve immediately.
