Candied Orange Peel Recipe | EatingWell image

Candied orange peel makes an attractive garnish for many desserts.

2-3 oranges
½ cup sugar
¼ cup water

Steps:

  • Using a vegetable peeler, remove zest from oranges in 1 1/2- to 2-inch-long pieces. Cut the pieces into very thin strips, about 1/8 inch wide. Cook in a small saucepan of boiling water for 5 minutes. Drain. Bring more water to a boil and cook the orange peel for another 5 minutes. Drain.
  • Bring sugar and 1/4 cup water to a simmer in a small saucepan, stirring until the sugar dissolves. Add the orange peel, cover and simmer for 3 minutes. Transfer the syrup and peel to a bowl. Cover and chill overnight.
  • Using a slotted spoon, transfer the orange peel to paper towels to drain before using.

baby spinach

3 c.

arugula

(11-oz.) can mandarin oranges, drained

1 c.

toasted walnuts

3/4 c.

dried cranberries

1/2 c.

shaved Parmesan

Pinch of flaky sea salt

2 tbsp.

red wine vinegar

1 tbsp.

orange juice

1 tbsp.

honey

2 tsp.

poppy seeds

1 tsp.

Dijon mustard

1/4 c.

extra-virgin olive oil

Kosher salt

Freshly ground black pepper

Steps:

  • In a large bowl, toss together spinach, arugula, mandarins, walnuts, and cranberries.  In a medium bowl, whisk together red wine vinegar, orange juice, honey, poppy seeds, and mustard. Slowly pour in oil while whisking until incorporated. Season with salt and pepper.  Pour dressing over salad and toss to combine. Top with Parmesan and a pinch of sea salt.
