Black Pepper Chicken Stir-Fry Recipe: How to Make It image

I just love this chicken stir-fry recipe, and the aroma is out of this world! The dish is slightly sweet and very peppery, so you may want to serve it over white or brown rice to tame the heat. —Barbie Miller, Oakdale, Minnesota

1/2 cup reduced-sodium soy sauce
1 tablespoon honey
3/4 teaspoon coarsely ground pepper
3/4 teaspoon garlic powder
1/2 teaspoon ground ginger
1/2 teaspoon ground turmeric
1/2 teaspoon curry powder
1/2 cup cornstarch
1-1/2 pounds boneless skinless chicken thighs, cubed
1/4 cup canola oil, divided
1 large onion, chopped
Minced fresh cilantro and thinly sliced green onions

Steps:

  • In a small bowl, combine the first seven ingredients. Place cornstarch in a large bowl. Add chicken in batches; tossing to coat. In a large skillet, heat 2 tablespoons oil over medium-high heat. Add chicken; cook and stir until no longer pink, 8-10 minutes. Remove and keep warm., Stir-fry onion in remaining oil until tender. Stir soy sauce mixture and add to pan. Bring to a boil; cook and stir 1-2 minutes or until sauce is thickened. Return chicken to pan; heat through. Top with cilantro and green onions.

2 cups all-purpose flour
1 tablespoon ground ginger
2 teaspoons baking soda
1-1/2 teaspoons coarse fresh ground black pepper
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/4 cup vegetable oil
1 cup firmly packed light brown sugar
1 egg
1/4 cup molasses
1/4 cup chopped crystallized ginger
3 tablespoons granulated sugar

Steps:

  • Preheat oven to 350°F. Spray baking sheets with baking spray.
  • Stir together flour, ground ginger, baking soda, cinnamon, black pepper, salt and cardamom in medium bowl; set aside. Cream butter, oil and brown sugar in large bowl until light and fluffy. Add egg and molasses and beat on medium speed until blended. Add flour mixture and beat just until blended; stir in candied ginger.
  • Shape dough in 1-inch balls. Roll in granulated sugar and place on baking sheets. Bake 10 to 12 minutes until lightly browned. Let cool 1 minute then remove to wire racks to cool completely.
