a simple recipe to making pickling vinegar that can be used for all chutneys and pickles.

Yield Makes 500 ml of vinegar

Steps:

  • Add all of the spices into the bottle of vinegar (they should all fit but if not then feel free to pour away a small amount. The items in the ingredients list are simply my recommendations, you can add whatever you want into your vinegar (just make sure that they are whole, not ground).
  • seal the lids back on tightly, store in the cupboard for around 3 months - or until they have infused enough for your tastes. Alternatively, for a much quicker process, place your bottle on the top rack of the dishwasher for one cycle (seems odd but really works, just make sure the lids are on tight!) then leave over night.
  • strain off all of the spices and additions, then use your vinegar to make all kinds of pickles and chutneys.

Number Of Ingredients 6

1 cup distilled white vinegar
2 tablespoons white sugar
1 teaspoon salt
? teaspoon ground black pepper
? cup water
8 large carrots, diced

Steps:

  • In a medium saucepan, mix distilled white vinegar, white sugar, salt, pepper and water. Bring the mixture to a boil. Remove from heat and allow to cool slightly.
  • Place the carrots in sterile containers. Cover with the vinegar solution. Seal the containers, refrigerate and marinate carrots 12 hours or overnight before serving.

Posted in response to a request for dill pickles made without vinegar. This recipe is per quart; make as many quarts as you like. These are excellent, and very easy to make. The hardest part about making pickles is scrubbing the cucumbers, and I'm not kidding. I prefer fairly small pickling cucumbers, and pay a premium to get them. Dump them in a sink, cover with cold water, then start fishing them out and scrubbing them THOROUGHLY with a soft brush. Get every bit of grit and dried-out cucumber blossom off of them, or they will not taste so good. When you have scrubbed every last blessed cucumber, rinse them again. Now you are ready to start - or maybe two-thirds done.
