Pickled Hen of the Woods Mushroom Recipe - Forager Chef image

Basic pickled hen of the woods mushrooms. Makes two pint canning jars, scale as needed. This is only a basic guide, play around with the recipe and make your own. That being said, if you're unsure about ph levels and pickling, use a ph tester and aim for a level below 4.2 if you change the water-vinegar ratio.

Number Of Ingredients 7

1 lb very young hen of the woods
3 cups water
1.5 tsp salt
1-2 large cloves of garlic
A few sprigs of fresh thyme
Two dried bay leaves
1 cup of champagne or white wine vinegar

Steps:

  • First trim and clean your hen of the woods, separating it into small leaves
  • Bring the water, salt, garlic, and herbs to a boil in a large pot. Add the mushrooms, cover and cook until the mushrooms are wilted and cooked through, about 5-10 minutes
  • When the mushrooms are cooked, add the vinegar
  • Lastly, pack your canning jars full of the mushrooms and then top the jars off with the pickling liquid
  • If you want to process them in a a water bath canner, you can do so for 15 minutes.

You can easily scale this recipe for larger batches, but since many people haven't pickled wild mushrooms before, this makes a good small testing batch. Remember that these are more than something to eat cold too, warm them up and enjoy how you would regular mushrooms.

Number Of Ingredients 7

1 lb chicken of the woods (preferably young and very tender )
3 cups water
1.5 tsp salt
2 large cloves of garlic
A few sprigs of fresh thyme
Two dried bay leaves
1 cup of champagne or white wine vinegar

Steps:

  • In a small stock pot, bring the water, salt, garlic and herbs to a simmer.
  • Add the chicken of the woods and cook until they have released their juice and cooked through, about 5 minutes.
  • Add the vinegar to the mixture, then pack pint canning jars full of the pickles. Pour the pickle liquid over the mushrooms and fill the jars leaving 1/2 an inch of headspace, then process the jars in a waterbath canner for 15 minutes.

1 bay leaf. ½ teaspoon red pepper flakes. 3 cloves garlic, peeled. 1 pound cleaned mushrooms, cut into bite-size pieces. 2 strips orange peel. Extra virgin olive oil, to cover. In a medium saucepan, combine the vinegar, white wine, peppercorns, thyme, bay leaf, red pepper flakes, and garlic. Bring to a boil.
