MAKING SALT FREE DILL PICKLES - HACKING SALT
Steps:
- Scrub cucumbers clean with a veggie brush and rinse the dill in water, shake off excess water.
- Cut the dill stems to a length where they will fit into your jars
- Place vinegar, water and sugar in a saucepan of at least 2 1/2 quarts capacity, and bring to boil.
- While brine is heating,Divide all the spices into equal amounts per jar and pack jars with layers of dill, garlic, onions, red pepper flakes, mustard seeds, black peppercorns, and cucumbers.
- Layering so spices are on the bottom and top of the cucumbers.
- Add one teaspoon of mixed pickling spice to each jar and 4 grape leafs for crispiness.
- Pour boiling hot brine into jars, filling within 1/2 inch of top, and seal.
- This will yield about three quarts/jars of pickles.
- Allow the jars to cool then place into the refrigerator for 1 week to "pickle"
- The longer the time in the refrigerator the more the flavors soak in.
- The pickles should be good in the refrigerator for up to 8 weeks.

PICKLED CUCUMBERS (SALT-FREE PICKLES) RECIPE - FOOD.COM
A great recipe for those living a low sodium diet. Comes from The No-Salt Cookbook. These taste wonderful and keep well in the fridge. What's better??? No one will know they are salt free! The cookbook recommends making these in a stainless steel bowl, but glass will work too. NOTE: After you have chilled down the pickled cucumbers , feel free to throw in some chunked up tomatoes which taste divine in this marinade too!

- Peel cucumbers and cut to your liking. You can cut the cucumber in half, then in long strips lengthwise, or simply cut them in rounds. Totally up to you. I like my in think rounds.
- Place cucumbers and onions in a stainless steel bowl large enough for all the ingredients.
- Put all the ingredients EXCEPT the cucumbers and onions in a saucepan and bring to a boil over high heat.
- Pour vinegar mixture over the cucumbers and onions; cover bowl tightly wth aluminum foil or plastic wrap and leave out on counter to cool.
- Once cool, refrigerate cucumbers overnight. Before serving, pour off the vinegar mixture and remove peppercorns.

Slice any remaining cucumbers in half and stack them on top of the whole cucumbers to fit in the jar, pressing them below the shoulder of the jar.
