A RECIPE FOR PICKLED MOREL MUSHROOMS - FORAGER CHEF



A recipe for pickled morel mushrooms - Forager Chef image

Yield:  4 half pint canning jars or two pints jars

Provided by Alan Bergo

Prep Time 5 minutes

Cook Time 25 minutes

Yield 4

Number Of Ingredients 8

Roughly 1.5 lbs fresh (small morels)
3 cups water
1 tbsp salt
5 black peppercorns
1 cup champagne vinegar
A few small sprig of fresh thyme
1 Large clove garlic (Thinly sliced )
1 Tablespoon Cooking oil

Steps:

  • Wash and clean the morels to remove grit, making sure to leave the morels whole.
  • Heat the oil and garlic until the garlic is lightly browned and caramelized, but not burnt. Add the water, salt, thyme, vinegar and pepper  then bring to a simmer. Add the fresh morels and cook, about 3-4 minutes, until they wilt and decrease in size. Discard the garlic.
  • Place the morels and the pickling liquid into 1/2 pint or pint canning jars and process in a water bath canner for 15-20 minutes.

1 pound fresh morel mushrooms
All-purpose flour
½ cup butter or margarine

Steps:

  • To clean morel mushrooms, place mushrooms in a pan or bowl. Cover with water; add a dash of salt. Soak for 10 to 15 minutes. Drain, rinse, and repeat two more times.
  • Pat mushrooms dry. Trim ends of stems, if necessary. Slice mushrooms lengthwise in half, or quarter large mushrooms. Toss with some flour to coat.
  • In a 12-inch skillet, melt the butter or margarine over medium heat. Add mushrooms and cook for 3 to 4 minutes or until golden brown, gently stirring occasionally. Serve warm. Makes 10 to 12 side-dish servings.
