4 pounds beef soup bones
1 onion, unpeeled and cut in half
5 slices fresh ginger
1 tablespoon salt
2 pods star anise
2?½ tablespoons fish sauce
4 quarts water
1 (8 ounce) package dried rice noodles
1?½ pounds beef top sirloin, thinly sliced
½ cup chopped cilantro
1 tablespoon chopped green onion
1?½ cups bean sprouts
1 bunch Thai basil
1 lime, cut into 4 wedges
¼ cup hoisin sauce
¼ cup chile-garlic sauce (such as Sriracha®)

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place beef bones on a baking sheet and roast in the preheated oven until browned, about 1 hour.
  • Place onion on a baking sheet and roast in the preheated oven until blackened and soft, about 45 minutes.
  • Place bones, onion, ginger, salt, star anise, and fish sauce in a large stockpot and cover with 4 quarts of water. Bring to a boil and reduce heat to low. Simmer on low for 6 to 10 hours. Strain the broth into a saucepan and set aside.
  • Place rice noodles in large bowl filled with room temperature water and allow to soak for 1 hour. Bring a large pot of water to a boil and after the noodles have soaked, place them in the boiling water for 1 minute. Bring stock to a simmer.
  • Divide noodles among 4 serving bowls; top with sirloin, cilantro, and green onion. Pour hot broth over the top. Stir and let sit until the beef is partially cooked and no longer pink, 1 to 2 minutes. Serve with bean sprouts, Thai basil, lime wedges, hoisin sauce, and chile-garlic sauce on the side.

1 large white onion, peeled and halved
Fresh ginger, halved lengthwise about 3-inches
4 whole cloves
3 cinnamon sticks
2 cardamom pods
1 tbsp. coriander seeds
8 cups beef stock
1 tbsp. sweetener
2 tbsp. Red Boat Fish Sauce
Sea salt, to taste
8 oz. raw steak, thinly sliced
7 oz. Annie Chun's Pad Thai Rice Noodles
Fresh herbs (mint, cilantro, basil, etc.)
Bean sprouts
Lime wedge
Red chilis, chopped
Huy Fong Sriracha Sauce
Lee Kum Kee Hoisin Sauce

Steps:

  • Saute the onion and ginger cut-side down over hot oil until slightly charred. Set aside.
  • In a large pot, heat the staranise, cloves, cinnamon, cardamom and coriander over medium-high heat for about 3 minutes or until fragrant.
  • Add in the charred onion, ginger, beef stock, and stir.
  • When your broth reaches a simmer, reduce to heat to medium-low and allow the soup to simmer for 30 more minutes.
  • Strain and discard the solid ingredients and stir in the fish sauce and sweetener into the hot broth. Season to taste.
  • As your broth simmers, cook the rice noodles on a separate pot according to package instructions.
  • Drain then briefly rinse the noodles with cold water to prevent them from continuing to cook.
  • Start by portioning the noodles in serving bowls, followed by the steak.
  • Pour the simmering broth and submerge the steak completely so it cooks.
  • Top each bowl with your preferred garnish and finish it off with a squeeze of lime.
  • Serve hot with sriracha and hoisin sauce on the side.

  • In a stockpot, cover oxtails with 3 quarts water. Bring to a boil over medium-high heat. Reduce heat; simmer, uncovered, 15 minutes. Meanwhile, arrange onions and ginger on a baking sheet. Broil 4 in. from the heat until charred, 5-8 minutes, turning once. Peel off and discard charred skin from onion and ginger.
    In a dry skillet over medium heat, cook and stir spices until fragrant, 3-5 minutes. Drain and discard water from oxtails; return oxtails to clean pan. Cover with 3 quarts water. Stir in onions, ginger, toasted spices, fish sauce, sugar, soy sauce and bay leaves. Bring to a boil over medium-high heat. Reduce heat; simmer, uncovered, 6 hours. While cooking, add water to keep oxtails covered with water.
    Remove oxtails and set aside until cool enough to handle. Remove and discard bones. Set beef aside for soup or save for another use. Strain stock through a cheesecloth-lined colander, discarding solids. If using immediately, skim fat. Or, refrigerate 8 hours or overnight; remove fat from surface. Broth can be covered and refrigerated up to 3 days or frozen 4 to 6 months., For the shrimp, in a shallow dish, combine oil, fish sauce, sriracha, lime zest and oregano. Add shrimp and stir to coat. Cover and refrigerate 45 minutes. Preheat oven to 375°. Drain and discard marinade. Arrange shrimp on a 15x10x1-in. baking sheet. Bake until shrimp turn pink, 8-10 minutes.
    Meanwhile, prepare noodles according to package directions. Drain and rinse with cold water. In a large saucepan, bring stock to a boil. If desired, season stock with additional fish sauce, salt and pepper. To serve, add noodles and, if desired, beef to serving bowls. Cover with stock. Arrange shrimp and garnishes as desired.
