Use this icing to make the decorative petits fours with butterflies by Karen Porter of Tilly's Cakes.

9 cups sifted confectioners' sugar
1/2 cup light corn syrup
1 teaspoon clear vanilla extract
1/2 teaspoon almond extract
Gel food coloring, in desired colors

Steps:

  • In a heatproof bowl set over (but not touching) simmering water, mix sugar, corn syrup, 1/2 cup water, vanilla and almond extracts together until they are warm, well combined, and smooth. Stir in enough food coloring until desired color is reached. Do not overheat. Let cool about 8 minutes before pouring.

A beautiful, shiny petit four icing with a hint of butter in the taste. Simple, easily colored, and a bit more opaque than most petit four icings. It can also be used on larger cakes if desired, but the sides of the cake will sometimes get a bit lumpy, so it's not something you'd want to use for large cakes on display. You may add food coloring, if desired.

9 cups confectioners' sugar
1 pinch salt
½ cup warm water
½ cup light corn syrup
1?½ teaspoons clear butter flavoring
1?½ teaspoons almond extract
1 teaspoon clear imitation vanilla extract

Steps:

  • Prepare a double boiler over medium heat; bring 2 inches of water in the lower pot to a simmer. Sift confectioners' sugar and salt into the top of the boiler. Add corn syrup and 1/2 cup warm water; whisk until well blended. Stir with a spatula until icing is completely smooth and an instant-read thermometer registers no higher than 105 degrees F (40 degrees C), about 5 minutes.
  • Stir butter flavoring, almond extract, and vanilla extract into the icing. Keep stirring until icing takes on a glossy sheen and flows easily off of the spatula, about 2 minutes. Remove from heat.

  • Trim cake so top is flat. Cut off crust. Cut in half horizontally. Cut halves lengthwise, then crosswise to make 20 squares. Place 1 1/2 in. apart on wire rack over wax paper. Coating icing: Mix ingredients until smooth (should be a little thinner than pancake syrup). One by one, place cake squares on top of fork over bowl of icing; spoon some over cakes, completely covering tops and sides. Slide cakes onto rack. Let set 30 minutes; cover bowl of icing airtight. If needed, thin remaining icing with a little water and give cakes a second coat. Let stand 30 minutes or until firm. Decorating icing: Mix sugar, syrup and 1 Tbsp water. Gradually add second Tbsp of water, stirring until mixture is smooth yet stiff enough to pipe. Stir red gel into bowl. Spoon into pastry bag fitted with plain #1 or #2 tip. Pipe onto squares to decorate like presents.
