If you've always wanted a hearty tomato topping without any oil, then tomato pesto packets are for you. Roasting the tomatoes in foil allows them to steam in their own aromatic juices. You can cook them year-round, opting for popping them in the oven or tossing them onto the grill until they're fragrant. These tomatoes are so versatile, so you'll decide how you want to enjoy them. Once you take them out of the oven or off the grill, let them sit for five minutes. Then serve the tomatoes warm or at room temperature, as a hearty side dish or as a flavorful topping for grilled chicken or fish.

2 cup(s) Fresh cherry tomato(es) small, yellow
2 medium Uncooked shallot(s) minced
1 medium clove(s) Garlic clove(s) minced
0.25 tsp Table salt
0.125 tsp Black pepper freshly ground
2 Tbsp Pine nuts
0.25 cup(s) Basil fresh, slivered

Steps:

  • Preheat oven to 400ºF.
  • Tear off four 12-inch or larger sheets of heavy-duty aluminum foil. In a medium bowl, toss together tomatoes, shallots, garlic, salt and pepper. Spoon 1/4 of tomato mixture in center of each piece of foil; bring up sides of foil to center. Seal foil making sure to leave space in each packet for air to circulate.
  • Place packets in a roasting pan and cook until tomatoes are aromatic and tender, about 20 to 30 minutes, depending on tomato size.
  • Meanwhile, warm a small nonstick skillet over medium heat. Place pine nuts in skillet and cook, shaking pan frequently, until pine nuts start to lightly brown, about 30 seconds; immediately remove nuts from skillet and set aside.
  • Remove packets from oven and let sit for 5 minutes; open each packet but be careful of escaping steam. Sprinkle each packet with 1 Tbsp basil and 1/2 Tbsp pine nuts.
  • Serving size: 1 packet

4 ounces whole fresh mushrooms
2 8 ounces skinless, boneless chicken breast halves
1 medium orange, yellow, red, or green sweet pepper, seeded and cut into 1-inch-thick strips
2 ounces fresh baby spinach
½ cup smoked dried tomato strips (not oil-packed)
¼ cup basil pesto
½ teaspoon salt
¼ teaspoon freshly ground black pepper
Fresh basil (optional)

Steps:

  • Tear off four 15x12-inch pieces of parchment paper. Halve or quarter any large mushrooms. Cut each chicken breast portion in half horizontally.
  • Place a chicken portion on half of each sheet of parchment paper. Top with mushrooms, sweet pepper, spinach, dried tomatoes, and pesto. Sprinkle with salt and black pepper. For each packet, fold parchment paper crosswise over filling. Fold and crimp edges to tightly seal in a half-moon shape.
  • Arrange packets, two at a time, on a microwave-safe plate. Microwave on 100% power (high) for 6 to 8 minutes or until chicken is no longer pink (165°F). Repeat with the remaining packets. Let stand for 3 minutes before carefully opening packets. If desired, garnish with fresh basil.
