Peppermint White Chocolate Chip Cookies - Food.com image

I think I came up with these as a result of surfing the web and adding a few ideas together. These are really, really good. Be sure to use the parchment or wax paper or you will have a terrible mess on your hands. (Guess how I know this. ;) )

Cook Time 12 minutes

Yield 3 1/2 dozen

Number Of Ingredients 10

1/2 cup butter, softened
1/2 cup sugar
1/4 cup light brown sugar
1/2 teaspoon vanilla
1 egg
1 1/2 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1 cup white chocolate chips (about 1/2 a 12 oz. Bag)
1/2 cup candy cane, crushed (about 50 of the little ones)

Steps:

  • Cream butter until light. Gradually add sugars, creaming well until blended. Beat in vanilla and egg.
  • Stir together flour, salt and soda. Add flour mixture to butter mixture, blending well.
  • Stir in chips and crushed candy canes.
  • Drop by level tablespoonfuls, 2 inches apart, onto cookie sheets covered with parchment paper. Bake at 375 degrees for about 12 minutes until golden.
  • Remove to wire racks to cool.

1/2 cup butter, softened
1-1/2 cups packed brown sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon peppermint extract
1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk chocolate English toffee bits
1/2 cup peppermint crunch baking chips or 1/4 cup white baking chips plus 1/4 cup crushed peppermint candies

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg and extracts. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture. Stir in toffee bits and baking chips., Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Flatten slightly with bottom of a glass. Bake until golden brown, 10-12 minutes. Cool on pans 2 minutes. Remove to wire racks to cool.

When she tells you to chill your dough overnight, don’t think you can skip over that. (If you do, your cookies will spread.) When she instructs you to roll the dough into balls before transferring them to the fridge to rest, do as she says, and you’ll get a nice plump, domed cookie instead of a sad flat one. Don’t go swapping in milk chocolate for dark, and chop the chocolate into large chunks for those dramatic, dense puddles of goo. One allowance: If you don’t have Maldon salt, another flaky salt or even kosher salt will do.
