Peppermint Cream Bites | Better Homes & Gardens image

These chocolate and mint layered dessert bars are cut into shapes after the crust is baked and the toppings are chilled. Choose circles, squares, or even stars! Sprinkle the remaining crumbs from around the cutouts over ice cream or a frosted cake.

1?½ cups crushed chocolate sandwich cookies with white filling (15 cookies)
3 tablespoons butter, melted
2 cups powdered sugar
2 tablespoons butter, softened
2 tablespoons milk
1 teaspoon peppermint extract
6 ounces bittersweet chocolate, chopped
2 teaspoons shortening

Steps:

  • Preheat oven to 350 degrees F. Line an 8x8x2-inch baking pan with foil, extending foil over edges of pan; set aside.
  • In a medium bowl combine crushed cookies and melted butter. Press mixture into the bottom of prepared pan. Bake for 8 minutes. Cool slightly in pan on a wire rack.
  • Meanwhile, in a food processor combine powdered sugar and softened butter. Cover and process until butter is evenly distributed. With processor running, add milk and peppermint extract through feed tube until a paste forms. Spread peppermint mixture evenly over prepared crust. Freeze for 45 minutes.
  • In a medium microwave-safe bowl combine chopped chocolate and shortening. Microwave on 100 percent power (high) about 1 minute or until chocolate is melted, stirring once. Let chocolate cool for 15 minutes. Pour chocolate over peppermint layer, spreading evenly. Using the edges of the foil, lift uncut bars out of pan. Use a 1-1/2-inch round cookie cutter to cut into rounds* or use a sharp knife to cut into squares. Store in the freezer until serving time.

2 ounces bittersweet chocolate, chopped
1 cup sugar
? cup unsweetened natural cocoa powder
1 stick unsalted butter, at room temperature
½ cup buttermilk
1 large egg
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon mint extract
½ teaspoon salt
2 cups flour
½ cup chocolate chips
1 cup confectioners' sugar
¼ cup unsweetened natural cocoa powder
2 tablespoons butter, melted
1-3 tablespoons milk
½ teaspoon pure vanilla extract
9 oz. peppermint candies or candy canes, crushed

Steps:

  • For the cookies, position racks in the top and bottom thirds of the oven; preheat to 400°. In a small bowl, microwave the chocolate on medium in 30-second bursts, stirring occasionally, until melted. Transfer to a large bowl. Add 1/2 cup water and the remaining cookie ingredients, except the flour and chocolate chips. Using an electric mixer on low, beat until the ingredients are well blended, stopping occasionally to scrape down the sides of the bowl, about 2 minutes. Add the flour and chocolate chips and beat on low until blended, about 1 minute.
  • Using a 1 1/2-inch (1 tbsp.) cookie scoop, scoop the dough onto two nonstick or parchment-lined baking sheets, spacing about 2 inches apart. Bake until the cookies spring back when pressed with a finger, rotating the sheets and reversing from the top to bottom racks halfway through baking, 7 to 9 minutes. Transfer the cookies to a wire rack; let cool. Repeat with remaining dough on clean, cold baking sheets.
  • For the toppings, sift the confectioners' sugar and cocoa powder into a medium bowl. Whisk in the butter, 1 tbsp. milk and the vanilla, adding more milk by the teaspoon until a smooth, creamy frosting forms. Dip the tops of the cookies into the frosting; top with the crushed candy. Let stand until set, about 30 minutes.

I got this recipe from a bag of Andes new peppermint crunch baking chips. The flavor is fabulous, but for some reason, when I baked them, they wouldn't bake through and I had to scrape them off the cookie sheets. They ended up being tasty, slightly chewy blobs... Perhaps someone will be brave enough to try this or to help me figure out how to fix the recipe?
