1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon white pepper
1/2 teaspoon pepper
1/8 to 1/4 teaspoon cayenne pepper
1 beef tenderloin roast (3 pounds)

Steps:

  • Combine seasonings and rub over entire tenderloin. Place on a rack in a roasting pan. , Bake, uncovered, at 425° until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand 10 minutes before carving.

  • Mix all the spices together well.
  • Rub into the tenderloin.
  • Place on rack in a roasting pan.
  • Bake at 400* for 45 minutes----rare; 60 minutes---medium rare; 65 minutes---medium; 73 minutes---well done.
  • Let stand for 10 minutes before slicing.
