SHRIMP AND BROCCOLI PENNE - THE LEMON BOWL®



Shrimp and Broccoli Penne - The Lemon Bowl® image

A fast and easy weeknight dinner recipe, the whole family will love this lemony, garlicky, shrimp and broccoli penne pasta.

Number Of Ingredients 10

8 ounces whole wheat penne (cooked according to package instructions)
1/4 cup extra virgin olive oil (divided)
1 pound raw shrimp (peeled and deveined)
1 teaspoon salt
1/2 teaspoon pepper
4 cloves garlic (grated)
2 large heads broccoli - cut into florets (about 4 cups)
1 juice and zest of lemon
parmesan cheese (minced parsley or basil and red chili flakes - to serve)
chili flakes and parmesan cheese (optional garnish)

Steps:

  • When cooking the pasta, reserve 1 cup of the starchy cooking liquid and set aside. Strain pasta and receive.
  • Pat shrimp dry with paper towel then sprinkle evenly with salt and pepper.
  • Heat 2 tablespoons of the olive oil in a large, deep skillet over medium-high heat. Add garlic and heat for 30 seconds to release aroma then add the shrimp.
  • Sauté shrimp in the pan until they turn pink, just 3-4 minutes total, being careful not to overcook. Remove from pan and set aside.
  • In the same pan, add broccoli florets and reserved starchy cooking liquid (or chicken broth). Bring to a boil then cover the pan with the lid and reduce to simmer. Let broccoli steam until bright green, about 3-4 minutes.
  • Add reserved cooked shrimp back into the pan along with the cooked pasta. Stir in remaining 2 tablespoons olive oil, lemon zest, and lemon juice. Toss well and add more salt or pepper to taste.
  • Serve with parmesan cheese, minced herbs and red chili flakes.

I got this recipe from my brother-in-law and it has been one of the most requested recipes at family gatherings and pot lucks. Everyone just loves it and it's so easy to make.

Number Of Ingredients 5

1 (16 ounce) box penne pasta, cooked (I use less sometimes)
2 (16 ounce) jars alfredo sauce, warmed
4 cups cheese, shredded & divided in half (4-cheese Mexican blend is good)
1 bunch broccoli, cooked (I use a large one)
3 -4 boneless skinless chicken breasts, seasoned to taste, cooked, & cut into bite-sized pieces

Steps:

  • Spray or grease a 13 x 9 pan. In a bowl, mix the pasta, chicken, broccoli, Alfredo sauce & one bag of the cheese. Gently stir until blended. Dump into baking pan. Sprinkle the remaining bag of cheese over the top. Bake at 350 degrees for about 10 minutes or until cheese melts.

    1. Using a small knife, trim round the broccoli to remove the dark green florets from the main stalks and put them to one side. Peel the stalks, trim off the dry end and throw this away. Peel and chop the garlic.
    2. Finely chop the broccoli stalk and put into a large pan with the garlic, anchovies and half the butter. Crumble in the chilli, cover with a lid and cook slowly for 8 to 10 minutes while you cook the pasta in boiling salted water according to the packet instructions.
    3. Something I like to do which is slightly different (but better, I’d like to think) is to cook the broccoli florets with the pasta for the last 4 minutes – this makes them soft enough to eat but leaves them with great colour and texture.
    4. Drain the pasta and broccoli, saving a little of the cooking water, then toss into the other pan. Remove the pan from the heat.
    5. Season to taste with sea salt, black pepper, the rest of the butter and finely grate in a large handful of Parmesan. Mix well, adding a little of the cooking water, to loosen, if needed, and make it shine.
    6. Serve immediately, sprinkling with another good handful of finely grated Parmesan.
