A handful of fresh mint brightens peas and pearl onions, making this dish an ideal side for a rich meal.

10 ounces red pearl onions
Coarse salt
1/2 ounce (1 tablespoon) unsalted butter
2 tablespoons water
2 packages (10 ounces each) frozen petite green peas
1/2 cup small fresh mint leaves

Steps:

  • Cut an X in stem end of each onion. Cook in salted boiling water for 1 to 2 minutes. Drain, and peel.
  • Heat butter and water in a pan over medium-high heat. Add onions, and cook for 4 minutes. Stir in peas and 3/4 teaspoon salt, and cook for 2 minutes. Stir in mint. Serve immediately.

1 tablespoon butter
1 tablespoon extra virgin olive oil
1 (14.4-oz.) package frozen pearl onions, thawed
1 teaspoon sugar
2 (14.4-oz.) packages frozen peas, thawed
2 tablespoons fresh lemon juice
¼ cup coarsely chopped fresh flat-leaf parsley
2 tablespoons butter
1?½ tablespoons coarsely chopped fresh dill
Kosher salt to taste
Freshly ground pepper to taste

Steps:

  • Melt 1 Tbsp. butter with olive oil in a large skillet over medium-high heat. Add pearl onions and sugar; sauté 5 to 7 minutes or until onions are caramel colored. Add peas and lemon juice; cook, stirring constantly, 2 to 3 minutes or until thoroughly heated. Remove from heat; stir in parsley, 2 Tbsp. butter, and fresh dill. Add kosher salt and freshly ground pepper to taste.
