Pearl tea is a delicious drink made with tea, milk, and large tapioca balls (the pearls). It is extremely popular in some Asian countries and is sometimes known as Bubble tea also.

1/2 cup prepared tapioca, chilled
2 cups strong tea, chilled
2 cups milk
2 tablespoons granulated sugar
2 cups crushed ice cubes

Steps:

  • Divide tapioca into 4 tall glasses.
  • Combine all remaining ingredients in a cocktail shaker and shake well until mixture is nice and frothy.
  • Pour into glasses, stir well to separate tapioca pearls and serve with a thick straw.

Number Of Ingredients 3

6 cups cold water
1 cup tapioca pearls
½ cup Sugar Syrup

Steps:

  • Boil water in medium saucepan. Add the tapioca; return to a boil. Reduce heat, cover, and boil gently 30 minutes. Remove from heat. Let tapioca sit 25 minutes in water, covered. Drain and rinse in a colander under cool running water. Pour Sugar Syrup over tapioca; use within 4 to 5 hours.
  • Variation for make-ahead tapioca:
  • Bring water to a boil in a medium saucepan. Add tapioca; return to a boil. Reduce heat, cover, and simmer gently 20 minutes. Remove from heat; let sit 15 minutes, covered. Drain and rinse in a colander beneath cool running water. Add Sugar Syrup; place in sealed container. Refrigerate until ready to use.
  • For tea, bring a medium saucepan of water to a boil (use a 4-to-1 ratio of water to tapioca), and add tapioca (1/4 cup per serving). Boil 1 to 3 minutes, or until soft. Rinse and cover with Sugar Syrup to taste. Add tea mixture of choice (see our recipe for Bubble Milk Tea at right).
  • Note: Precooked tapioca should be used within 3 days, or it will get mushy.

  • To Prep In a small pot, mix the sugar and water and bring the mixture to a boil before reducing to a simmer and continuing to cook until the syrup has begun to thicken. Remove the syrup from the heat and let cool slightly. While the syrup cools, begin to cook the tapioca pearls. In a large pot, boil water and cook the tapioca pearls according to packet instructions, or until they become soft and chewy. When they have reached the desired texture, remove them from the pot and drain them. Transfer the pearls in to a bowl and spoon in some of the sugar syrup and mix. Set aside. To make the tea, combine hot water with tea and steep for 5 mins before removing tea and adding in the milk. To Serve Line the inside of the serving glass with some of the sugar syrup and then spoon in some of the pearls. Finish by pouring in the milk tea and ice if needed and serve!
