Pearl Pasta Salad Recipe: How to Make It image

I was served this salad at a hotel in Sacramento and just loved it. Here’s my version. It’s great to take along on camping trips or picnics.

Yield 15 servings.

Number Of Ingredients 8

2 cups uncooked acini di pepe pasta
3 cups frozen corn
1 jar (14 ounces) oil-packed sun-dried tomatoes, drained and chopped
1 jar (6 ounces) prepared pesto
1/2 cup grated Parmesan cheese
1/4 cup olive oil
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large saucepan, cook pasta according to package directions, adding corn during the last 2 minutes. Drain and rinse in cold water., In a large bowl, combine the tomatoes, pesto, cheese, oil, salt and pepper. Add pasta and corn; toss to coat. Refrigerate until serving.

1 bn Asparagus
Fresh basil
2 tb Fresh Parmesan
1 c Pearl pasta; (available in
1 tb olive oil
; specialty food
; stores)
1 Butternut squash
1 Shallot
1 c Vegetable stock
1 tb Butter

Steps:

  • "Cook pasta for 6 minutes in salted boiling water, drain and rinse in cold water, toss with olive oil and reserve. Blanch and shock asparagus and thinly slice diagonally, reserving tips whole. Peel butternut squash and cut into small dice -- about 1 cup. Dice and reserve shallot. Bring the stock to a boil in a saucepan. In a skillet, saute the shallot and squash in olive oil, adding stock as necessary until al dente. Add in pearl pasta, asparagus, torn basil and the salted butter. Adjust seasoning and finish by stirring in parmesan cheese. Garnish with a basil sprig. Yield: 1 serving Recipe by: COOKING LIVE SHOW #CL9274 "
