300 grams Giant Pearl Couscous
5 grams Turmeric powder
20 grams Dill (Chopped)
20 grams Parsley (Chopped)
20 grams Mint (Chopped)
125 grams Golden Raisins
100 grams Pomegranate Seeds
30 ml rapeseed oil
3 lemons (juiced)
1 lemon zested
10 grams Sea salt
2 grams Black Pepper

Steps:

  • Add turmeric powder to a large pot of boiling salted water. Add couscous & cook until al dente to the tooth. Drain & let cool. Drizzle with a little oil to stop it from sticking.
  • Add all the herbs, golden raisins, pomegranate, lemon, rapeseed oil & seasoning & mix well to combine everything together.
  • Taste & adjust consistency if required.
