Creamy Peanut Butter Refrigerator Pie Recipe | Allrecipes image

Easy, no-bake refrigerator pie. Loved by kids and adults alike. I use graham or Oreo® crusts; each is excellent. The Oreo® crusts brings out more chocolate flavor. Top with whipped cream and drizzle with chocolate syrup, if desired.

1 (8 ounce) package cream cheese, softened
1 cup creamy peanut butter (such as Reese's®)
1 cup confectioners' sugar
1 (8 ounce) container frozen whipped topping (Cool Whip®), thawed
¾ cup miniature semisweet chocolate chips
1 (9 inch) prepared graham cracker crust

Steps:

  • Mix cream cheese and peanut butter together thoroughly in a bowl. Stir confectioners' sugar into cream cheese mixture. Fold whipped topping into mixture with a spoon; mix thoroughly, scraping bottom and sides of bowl to incorporate completely. Add chocolate chips, gently stir into the mixture.
  • Spoon the filling into the pie crust, heaping more in the center of the pie.
  • Refrigerate until firm, 1 to 2 hours.

½ cup butter or margarine, softened
1 cup chunky peanut butter
¾ cup sugar
½ cup firmly packed brown sugar
1 egg, lightly beaten
1 teaspoon vanilla extract
1?¼ cups all-purpose flour
1?½ teaspoons baking powder
¼ teaspoon salt

Steps:

  • Cream butter and peanut butter in a large mixing bowl. Gradually add sugar, beating well. Beat in egg and vanilla.
  • Combine flour, baking powder, and salt; add to creamed mixture, stirring well.
  • Divide dough in half; shape each half into a roll, 2 inches in diameter. Wrap in waxed paper, and chill 3 hours or until firm.
  • Cut into 1/4-inch slices; place 2 inches apart on ungreased cookie sheets. Bake at 350° for 10 minutes or until lightly browned. Remove from cookie sheets, and cool on wire racks.
