My family loves this peanut butter cookie bars recipe—oatmeal, brownie bars, peanuts—it's made from all our favorite things! Oatmeal, peanut butter and chocolate chips make these bars a big hit with kids of all ages. Since I always have these basic ingredients on hand, I can whip up a batch anytime. —Patricia Staudt, Marble Rock, Iowa

Number Of Ingredients 15

1/2 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1 large egg, room temperature
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup quick-cooking oats
1 teaspoon baking soda
1/4 teaspoon salt
1 cup semisweet chocolate chips
ICING:
1/2 cup confectioners' sugar
2 tablespoons creamy peanut butter
2 tablespoons milk

Steps:

  • In a large bowl, cream the butter, sugars and peanut butter until light and fluffy. Beat in egg and vanilla. Combine the flour, oats, baking soda and salt; gradually beat into creamed mixture and mix well. Spread into a greased 13x9-in. baking pan. Sprinkle with chocolate chips. , Bake at 350° for 20-25 minutes or until lightly browned. Cool on a wire rack for 10 minutes. , Combine icing ingredients; drizzle over the top. Cool completely. Cut into bars.

1 cup Peanut butter Natural
1 cup Applesauce unsweetened
1/2 cup Honey
1/2 cup White chocolate
1/2 cup Almond Milk Vanilla
1 teaspoon Vanilla extract
5 cups Oatmeal Rolled
1/2 cup Almonds Slivered
1 cup Vanilla Whey Protein
1/2 cup Raisins
1/2 cup dried cranberries
1/2 cup sunflower seeds
1 tablespoon Flax seeds ground
3 tablespoons Chia Seeds

Steps:

  • "Combine Peanut butter, Apple Sauce, Honey, White Chocolate, Almond Milk and Vanilla extract in a microwave safe dish. Heat for 1 minute. During that minute combine remaining ingredients in a very large bowl and mix with heavy wooden spoon. DING! Take out Peanut Butter mixture, stir, and heat for one more minute. During that minute start cleaning up and putting everything away. DING! Add peanut butter mix to Oat mix and stir until well combined. I lay a silicon mat on the bottom of a 9 X 13 and spread mixture over it evenly. Ok here is where I try and make these bars look nice... I put another silicon mat on top and press and smooth out the bars. Take of the top mat, take the bars out flip over back into the 9 X 13, and pull of the the mat. Cover and refrigerate! My 9 x 13 dish never get put away... once the bars are about gone, I make a new batch so there are always some in the fridge!"
