So very easy to make, the recipe doubles very nicely. Made up a couple batches to freeze for Christmas gifts. Recipe came from an Amish Cookbook published in 1977.

1 cup brown sugar
1/2 cup vegetable oil
1 cup peanut butter
1/4 teaspoon salt
1/2 teaspoon vanilla
1 egg
1 3/4 cups flour, sifted
2 teaspoons baking powder
2 tablespoons milk

Steps:

  • Cream sugar, vegetable oil, peanut butter, salt, vanilla, egg and milk.
  • Add sifted flour and baking powder.
  • Roll into small balls, then take fork and press them down.
  • Bake at 375 for 10 minutes.

1 Cup Peanut Butter (Sugar Free)
1 Large Egg
1/3 Cup Confectioners Swerve (or ½ cup powdered monk fruit/allulose)
1 Tbsp Almond Flour
1 tsp Vanilla Extract

Steps:

  • Preheat oven to 350F
  • In a medium bowl combine all ingredients until thoroughly mixed
  • Scoop heaping one tablespoon-sized piece of dough into 12-15 balls. Place 2 inches apart on lined cookie sheets and flatten in a criss-cross with a fork
  • Bake for 12-15 minutes until edges of cookies are golden brown
  • Let cool completely before eating.
