I love the taste of peanut butter and bacon together, and here's a great way to have it on a hamburger! I found these once in a restaurant, and have made them at home ever since.

6 slices bacon, long strips cut in half
2 lbs ground beef
2 teaspoons Worcestershire sauce
1 teaspoon dried onion flakes
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
Tabasco sauce (optional) or cayenne, to taste (optional)
1/4 cup chunky peanut butter
2 teaspoons soy sauce
2 garlic cloves, squished through a garlic press
3 tablespoons chicken broth (or more, to desired thickness)

Steps:

  • Cut the bacon strips in half so you have 12 pieces, each one approximately 4 inches long; fry the bacon well, keeping the strips as straight as you can (a bacon weight works well for that), then set aside.
  • Drain the pan of fat but don't wipe out the pan; turn the heat off- you'll come back to this pan later.
  • In a large bowl mix together the ground beef, Worcestershire, dried onion, salt, garlic powder, and pepper (and Tabasco/cayenne, if using).
  • In a separate bowl mix together the peanut butter, soy sauce, squished garlic, and chicken broth- this is your grilling sauce; if it's too thick still, add broth until it's a consistency you like (I like it thicker).
  • Form the beef mixture into six patties.
  • Reheat your pan and cook them as you would regular burgers, but brush them on both sides occasionally with the marinade.
  • You can add more chicken broth if you want the grilling sauce to go further, or a bit melted butter.
  • Now for you low carbers, remember, peanuts are not low-carb, so go easy with the grilling sauce; it'll still taste wonderful if you don't use all of it up on the burgers!
  • Low-carb serving: top it with the bacon, either in strips or crumbled, and enjoy; you can add lettuce and tomato if you like, but I love it just the way it is.
  • High-carb serving: eat it on a bun with lettuce and tomato and cheese.

1 1/2 cups bacon bits
1/2 yellow onion 
1/4 cup maple syrup 
1 tablespoon Dijon mustard 
2 tablespoons apple cider vinegar 
1 1/2 tablespoons brown sugar 
2 cloves garlic 
1 teaspoon pepper 
1/2 teaspoon salt 
Six 8-ounce beef patties
6 slices Cheddar
6 brioche buns, buttered 
Mayonnaise, for spreading
Crunchy peanut butter, for spreading
6 small handfuls green leaf lettuce 
1 tomato, sliced 
2 dill pickles, sliced 

Steps:

  • Heat a grill to medium-high.
  • For the bacon jam: Place the bacon, onion, syrup, mustard, apple cider vinegar, sugar, garlic, pepper and salt in a food processor and blend until smooth with no lumps.
  • For the peanut butter burgers: Cook the patties on the grill until they have almost reached your desired level of doneness. While still on the grill, add a slice of cheese and a tablespoon of bacon jam to each patty, covering the patties for about 20 seconds to melt the cheese.
  • Toast the buns, then spread mayonnaise on the top half and peanut butter on the bottom half of each. Place the burgers on the buns, followed by a small handful of lettuce and a few slices of tomato and pickle.

The Sporkies is a Wisconsin State Fair food competition that started in 2013. This is my spin on this surprisingly delicious new burger. Think about it...savory lean bison grilled until medium. Then topped with ground roasted peanuts and two strips of salty bacon. Served on Texas toast and a side of your favorite coleslaw. Perfection!

  • In a large bowl, gently combine all the the burger ingredients until well mixed. Form into 4 equally-sized patties that are about an inch or so in thickness. On a preheated charcoal grill, cook burgers for approximately 3-4 minutes per side, or until cooked to your desired doneness. Keep in mind, bison is a lean red meat and dries out quickly. I do not recommend cooking past medium. Remove burgers from the grill and let them rest for a few minutes so the juices redistribute. To assemble: Top each burger with a tablespoon of peanut butter and 2 slices of bacon (that’s been halved and laid on the top of the burger like an X) and sandwich it between the toasty buns.
