Filling
1 cup sugar
2 large Land O Lakes® Eggs slightly beaten
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
4 to 6 medium (4 cups) peaches, * peeled, sliced
Cobbler
1 1/2 cups all-purpose flour
5 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup cold Land O Lakes® Butter cut into chunks
1 large Land O Lakes® Egg slightly beaten
3 tablespoons milk
Vanilla ice cream, if desired

Steps:

  • Heat oven to 400°F.
  • Combine all filling ingredients except peaches in bowl. Stir in peaches. Pour into ungreased 13x9-inch baking pan.
  • Combine 1 1/2 cups flour, 2 tablespoons sugar, baking powder and salt in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Stir in egg and milk just until moistened. Drop mixture by teaspoonfuls over peaches; sprinkle with remaining sugar.
  • Bake 35-40 minutes or until golden brown and bubbly around edges.
  • Spoon cobbler into individual serving dishes. Serve with ice cream, if desired.

2 pounds pitted, peeled, sliced fresh or frozen peaches
? cup sugar
¼ cup cream
1 tablespoon cornstarch
¼ teaspoon ground cardamom
¼ teaspoon pure almond extract
1 cup flour
¼ cup sugar
1?½ teaspoons baking powder
½ teaspoon salt
¾ cup cream, plus more for brushing
2 tablespoons sliced almonds
1 tablespoon raw sugar

Steps:

  • FILLING
  • In a large bowl, mix peaches with sugar, cream, cornstarch, cardamom and almond extract until the fruit is evenly coated. Transfer to a 2-qt. baking dish.
  • TOPPING
  • In a medium bowl, whisk the flour, sugar, baking powder and salt. Add cream and mix just until the dough comes together.
  • Pat into a 1/2-inch-thick round; cut into 6 wedges, like a pie, and arrange on top of the peach mixture. Brush the biscuits with cream, then sprinkle them with almonds and raw sugar. Bake at 400 degrees until the filling bubbles and a toothpick inserted into the biscuits comes out clean, tenting with foil if the biscuits are browning too quickly, 35 to 40 minutes.

I adapted this recipe from Sunset Magazine's "Cobbler for a Crowd". I did cut the sugar in the original recipe, which also calls for fresh fruit which has a better texture. I do add some fresh peaches for that reason when it is available.
