PEACH AND GINGER SHRUB RECIPE | REAL SIMPLE
Shrubs, or fruit-flavored vinegars mixed with alcohol and soda, are rising in popularity. In this summery version, the sharpness from the vinegar and fresh ginger is balanced by the sweetness from the in-season peach, making it a well-balanced, flavor-forward cocktail. Using a ripe peach is key here, as it will blend more easily with the vinegar, gin, sugar, and ginger. You’ll want to stir in the seltzer water just before serving to ensure it stays fresh and bubbly. When guests arrive, pour the shrub over ice, and garnish with a fresh peach slice. We’re thirsty just thinking about it!
