1.75 cups all-purpose flour
1 cup cold butter (scant)
1 pinch salt
1 tablespoon cold water
Parchment paper sheet
dried Beans (for baking blind)
3 eggs
0.667 cup sugar
0.667 cup double cream (48% fat)
2 tablespoons lemon juice
1 teaspoon grated Lemon peel
1 cup blanched Almond flour
0.333 cup butter
3 Peaches (depending on size)

Steps:

  • Quickly combine the flour, chopped butter, salt and 1–2 tablespoons water to make a shortcrust pastry. Form into a ball, wrap in plastic wrap and put into the refrigerator for about 1 hour.
  • Then roll out on a floured work surface and use to line a greased tart pan. Cut off the excess by rolling over the top of the pan with your rolling pin.
  • Cut a piece of baking parchment to fit the pan, lay on the pastry and weigh down with dried beans. Bake in a preheated oven (200°C/400°F) for 20 minutes, then take out of the oven and remove the baking parchment and dried beans.
  • Meanwhile, beat the eggs and sugar in a metal bowl until thick and foamy. Stir in the creme double, lemon juice and grated lemon peel and add the butter in small flakes. Then beat over a hot bain-marie with an electric beater until thick and creamy. Finally stir in the ground almonds.
  • Drop the peaches into boiling water for a few seconds, then skin, halve, remove the pits and slice thinly.
  • Spread the almond filling smoothly in the hot pastry shell, arrange the peach slices attractively on the filling and bake in a preheated oven (180°C/350°F) for about 45 minutes, until the filling is set. It should be lightly browned, but cover with aluminum foil if it browns too quickly. Take out of the oven and let cool.

Crust
1/2 cup Land O Lakes® Butter softened
1/3 cup sugar
1 1/4 cups all-purpose flour
1/2 teaspoon almond extract
Filling
3 large (3 cups) peaches, * peeled, sliced
1/2 cup sugar
1/4 cup Land O Lakes® Heavy Whipping Cream
1 tablespoon all-purpose flour
1 large Land O Lakes® Egg
2 tablespoons sliced almonds

Steps:

  • Heat oven to 400°F.
  • Combine butter and 1/3 cup sugar in bowl. Beat at medium speed, scraping bowl often, until creamy. Add 1 1/4 cups flour and almond extract; beat at low speed until well mixed.
  • Press dough onto bottom and up sides of ungreased 9-inch tart pan with removable bottom. Prick bottom and sides of crust with fork. Bake 15-18 minutes or until light golden brown. Remove crust from oven; arrange peach slices over hot, partially baked crust.
  • Reduce oven temperature to 350°F.
  • Combine all remaining filling ingredients except almonds in bowl with whisk. Pour filling mixture over peach slices; sprinkle with sliced almonds. Bake 32-40 minutes or until crust is golden brown and filling is set. Cool completely. Store refrigerated.
