Cake or cobbler depends who eats it! I just bought a bunch of the juiciest peaches! Eat a couple then came up with this sweet, fragrant, doughy cake. I used walnuts but pecans would be great too. This is easy to bring for picnics just bake it in a foil pan. I leave the skin on the peaches for the nutrition. But you can peel them but it real is good with the skin.

Number Of Ingredients 12

1 tablespoon butter
1 cup sugar
2 1/2 cups flour
1 tablespoon baking powder
1 1/2 cups milk
1 egg
1 pinch salt
1/2 cup chopped walnuts or 1/2 cup pecans
1/2 cup sugar
2 teaspoons cinnamon
4 large peaches, pitted and sliced into 10 slices each
1 tablespoon melted butter

Steps:

  • Preheat oven to 350°F.
  • Grease and butter a 9x13-inch glass pan.
  • In a food processor mix the dough ingredients.
  • Pour into prepared pan.
  • Mix sugar and cinnamon together.
  • Pour half the sugar on batter.
  • Place in 3 rows 10 slices of peaches each row.
  • Eat 2 slices for yourself.
  • Sprinkle the chopped nut over the peaches then top with the sugar and drizzle the butter over the sugar.
  • Bake for 30-35 minutes.

Trying to organize my recipes I came across an old browned newspaper clipping and found this delight! The only addition I made was to make the pecans, but you can easily use slivered almonds or walnuts. This cobbler reminds me of the many times I enjoyed my great aunt's freshly baked cobblers when as a child my Pop-Pop and I would walk down just 2 houses to enjoy her delicious cobblers. As it bakes the aroma will make you eager for it to get done! We love it!

Number Of Ingredients 7

8 - cups fresh sliced peaches
2 cup(s) sugar
2-3 teaspoon(s) corntarch
1/2 teaspoon(s) nutmeg
1 teaspoon(s) almond extract
1 cup(s) chopped pecans
- pastry for double-crust, 9-inch pie

Steps:

  • Combine peaches, sugar, cornstarch and nutmeg in a large saucepan. Let sit until syrup forms.
  • Bring peach mixture to a boil and cook over low heat 10 minutes or until tender.
  • Remove from heat; add nuts, butter and almond extract. Stir well.
  • Spoon half of peaches into a lightly buttered 10 x 8-inch baking dish.
  • Roll out half of pastry to 1/8-inch thickness on a lightly flour surface. Put on top of peaches. Bake in preheated 475 degree oven 12 minutes or until golden brown.
  • Spoon remaining peaches over baked pastry. Roll out remaining pastry and cut into 1/2-inch strips; arrange in lattice design over the peaches.
  • Return to oven to bake 10-15 minutes or until lightly browned.
