6 cups sliced peaches
2/3 teaspoon cinnamon

Steps:

  • Preheat oven to 350 and butter a 9x9 baking dish.
  • Layer peaches on the bottom of the dish.
  • Mix the rest of the ingredients in a bowl, forming a crumble topping.
  • Sprinkle on top of peaches and bake for 40 minutes.
  • Let cool for at least 10 minutes before serving.

3 cups fresh or frozen thinly sliced peaches, thawed (4 to 5 medium)
2 tablespoons sugar
5 slices whole wheat bread, torn into small pieces
1/4 cup firmly packed brown sugar
1 teaspoon cinnamon
3 tablespoons margarine or butter, melted

Steps:

  • Heat oven to 375°F. In medium bowl, combine peaches and sugar; toss to coat. Set aside.
  • In food processor bowl with metal blade, process bread pieces to make about 3 cups crumbs.* Add brown sugar and cinnamon; process to mix well. With machine running, slowly add margarine until well mixed.
  • Sprinkle 1/3 of crumb mixture evenly in bottom of ungreased 8-inch square (2-quart) glass baking dish. Layer half of peach mixture on top of crumb mixture. Repeat layers. Top with remaining crumbs.
  • Bake at 375°F. for 20 to 30 minutes or until peaches are tender when pierced with fork. If desired, serve warm with ice cream.
