175g plain flour , plus extra for rolling
85g cold unsalted butter , cut into small pieces
1 tbsp caster sugar
2 egg yolks
100g caster sugar
140g butter
2 eggs , beaten
140g ground almond
50g plain flour
3 peaches , sliced
peach preserve or apricot jam
crème fraîche , to serve

Steps:

  • To make the pastry, rub together the flour and butter until it looks like fine breadcrumbs, then mix in the sugar. Add 1 egg yolk and 1 tsp water, followed by the next yolk and 1 tsp water until the dough just comes together. Wrap in cling film and refrigerate for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Roll the pastry out on a lightly floured surface until big enough to line a 23cm tart tin. If the dough rips, simply patch it up. Cut away the excess pastry. Line with greaseproof paper, fill with baking beans, then bake for 10 mins. Remove paper and beans. Prick quite a few holes in the base of your tart, then bake for another 10-15 mins until biscuity.
  • While the pastry cooks, make the filling. Whisk the sugar and butter together until you get a pale paste. Beat in the eggs and finally add the almonds and flour. Spoon into pastry case, arrange the peach slices across the top in a pattern and bake for 30-40 mins until golden. When cool, brush your preserve or jam across the top. Serve with a little pot of crème fraîche on the side and eat it quick before anyone else gets their hands on it!

? cup sliced almonds
1?½ cups all-purpose flour
1 tablespoon granulated sugar
¾ teaspoon salt
½ cup (1 stick) cold unsalted butter, cut into 8 pieces
3 to 4 tablespoons ice water
¼ teaspoon almond extract
8 to 9 large peaches (about 2 3/4 pounds), pitted and sliced about 1/2 inch thick
¾ cup granulated sugar
1?½ tablespoons cornstarch
¼ teaspoon ground Saigon cinnamon
1 large egg
1 tablespoon water
1 tablespoon turbinado or granulated sugar for garnish

Steps:

  • Toast the almonds: Preheat the oven to 300°. Scatter the almonds in a single layer on a baking sheet and bake, stirring occasionally, until golden brown, about 15 minutes. Remove from the oven and cool completely.
  • Make the pastry: Process the almonds in a blender or food processor until finely chopped. Add the flour, granulated sugar, and salt and pulse to combine. Add the butter and pulse until it resembles small peas. Add the ice water, 1 tablespoon at a time, and almond extract, and process just until the dough comes together and forms a ball around the blades. (Do not overprocess.) Remove the dough from the processor, wrap it in plastic wrap, and chill at least 30 minutes or overnight (or freeze up to 2 months).
  • Place a rack in the upper third of the oven and preheat to 375°.
  • Make the filling: Place the peach slices in a large bowl. In a small bowl, stir together the granulated sugar, cornstarch, and cinnamon until well blended. Add the sugar mixture to the peaches, stirring gently.
  • Turn the dough out onto a floured pastry cloth or surface and roll into a 16-inch circle using a floured rolling pin. Fold it in half, transfer to an ungreased 10-inch cast iron skillet, and gently unfold the pastry, fitting it into the bottom of the pan and allowing the excess pastry to hang over the edge. (Don't bother to trim the dough—any unevenness adds to the rustic quality of the tart.)
  • Spoon the peach mixture into the pastry, mounding it in the middle. Gently fold the edges of the pastry up around the filling, overlapping them in soft folds. Take care that the pastry doesn't tear around the edge of the tart or the juices will escape during baking.
  • Whisk together the egg and water in a small bowl. Brush the egg wash over the pastry and sprinkle it with the turbinado sugar. Bake until the pastry is golden brown and the fruit is hot and bubbly, 35 to 40 minutes. Let cool for 1 hour to set the juices and serve warm

  • Preheat oven to 375. Coarsely chop nuts with brown sugar, flour and salt in processor. Add in butter, process till nuts are finely minced. Press half of mix over bottom of 9" springform pan. Press remaining half of mix over bottom of 9" cake pan. Bake till crusts are golden brown, about 20 min. Transfer to racks; cook completely. Break crust in pans into crumbs. Place 1 tbs water in small bowl. Sprinkle gelatin over; let stand till gelatin softens, about 10 min. Whisk yolks, sugar, kirsch and 3 tbs water in medium metal bowl till blended. Set bowl over saucepan of simmering water; whisk constantly till mix registers 160 on candy thermometer, about 4 min. Remove bowl from over water. Add in gelatin, then white chocolate and whisk till gelatin dissolves and chocolate melts. Let stand till mix is cold but not set, whisking occasionally, about 10 min. Beat cream in large bowl till soft peaks form. Fold yolk mix into cream. Spread 1/3 of mousse over crust in spring form pan. Sprinkle half of minced peaches over. Sprinkle half of crumbs over peaches. Drop 1/3 of mousse by Tbsp. over peaches, spacing proportionately. Spread mousse carefully over, covering crumbs. Sprinkle with remaining minced peaches and crumbs. Carefully spread remaining mousse proportionately over. Cover and freeze over night. (Can be made 3 days ahead. Keep frzn.) Mix peach slices and powdered sugar in medium bowl. Let stand 15 min. Using knife, cut around pan sides to loosen torte. Release pan sides; transfer torte to platter. Arrange peaches in concentric circles atop torte. Let stand at room temperature 30 min and serve.
