The pawpaw, paw paw, paw-paw, or common pawpaw (Asimina triloba) is a species in the same plant family as the custard-apple, cherimoya, sweetsop, ylang-ylang and soursop. The flavor of the fruit is something like banana custard. The pawpaw is native to the eastern United States and Canada. From the University of Kentucky Extension Service.

1 cup pawpaw, pulp of
2 ounces grated coconut
1 1/4 cups half-and-half
1 teaspoon vanilla
3 eggs, beaten
1 dash salt
2 ounces sugar (superfine preferred)
1 orange, zest of, serrated

Steps:

  • Preheat oven to 375°F.
  • Mix pawpaw pulp with coconut.
  • Layer on bottom of buttered ovenproof casserole dish.
  • Heat half and half mixed with the vanilla until bubbles form.
  • Beat eggs with salt and sugar and while still beating, pour on the half and half very slowly so as not to curdle the eggs.
  • Add the orange rind if using.
  • Pour over fruit and place in a pan of hot water.
  • Bake in oven for 30 minutes or until custard is set.
  • Turn out onto a plate when cool to show off the fruit layer.

Number Of Ingredients 5

5 lbs pawpaws
2 cuos water
1/2 c bottled lemon juice
3 c sugar
2 teaspoons vanilla extract

Steps:

  • Wash and peel pawpaws, put in stainless or enamel pot,  with the 2 cups water and 1/2 cup lemon juice, without removing seeds.
  • Cook until soft, run through seive or food mill. 
  • Add pulp back to pan, add sugar, and cook down on low until mixture thickens.  (About an hour) 
  • Turn off heat, add vanilla and stir well. 
  • Ladle into prepared pint or 1/2 pint jars to 1/4 inch headspace.  Remove air bubbles, add more preserves if needed to reach correct headspace.Waterbath for 10 minutes.
