8 Pav / Bread Roll
Butter
Pav bhaji masala powder
Coriander Leaves
Green Peas- ½ cupboiled
Potatoes- 1 boiled & mashed
Butter- 4 Tbsp
Onion- 1finely chopped
Ginger-Garlic paste- ½ tsp
Tomatoes-2finely chopped
Capsicum/Bell Pepper-½ finely chopped
Kashmiri red chilli powder / lal mirch powder-¼ tsp
Pav Bhaji Masala Powder- 1 tsp+½ tsp
Coriander Leaves finely chopped
½ lemon juice

Steps:

  • To prepare the bhaji, first, we need to cook the green peas and potatoes in a cooker for 1 whistle.
  • As the recipe is prepared on a tawa, I have used a big flat round tawa.
  • Heat a tawa on a medium flame. Add 2 TBSP butter and a little oil on the tawa.
  • As the butter melts, add finely chopped onions and saute nicely.
  • Then add ginger-garlic paste. Mix and saute till its raw smell is gone.
  • Now add finely chopped tomato. Fry till the tomatoes become mushy and leave oil.
  • To this add a little salt, red chilly powder, pav bhaji masala powder, and mix nicely.
  • Take a masher and mash all the vegetables that are being cooked on the tawa.
  • Now make a hole at the center of the tawa and add boiled peas and potatoes. Mash and mix everything to form a smooth masala.
  • Mix everything and make one more hole and add a little oil. Put finely chopped capsicum pieces and saute nicely. Mash everything well and combine it nicely.
  • This will form a thick masala. So now use the boiled peas water or normal water to mix with it and make it a smooth running consistency.
  • bring to a boil and switch off the flame.
  • Transfer it to a bowl and garnish with some coriander leaves and butter.
  • On the same tawa add a little butter,pav bhaji masala powder,coriander leaves and place the slit pav buns on it.
  • Press the pav on the tawa using hands or a turner.
  • Fry on both sides. Take out on a place and how to serve?

1 1/2 cups cooked rice
2 tsp ghee
1/2 tsp cumin seeds ((jeera))
3 cloves (laung / lavang)
25 mm (1") piece cinnamon (dalchini)
1 bayleaf ((tejpatta))
salt to taste
To Be Mixed Into A Churi Papad
1 cup roasted and coarsely crushed papad
1/4 tsp chilli powder
1 tsp melted ghee
Other Ingredients
3/4 cup leftover bhaji

Steps:

  • Heat the ghee in a broad non-stick pan, add the cumin seeds, cloves, cinnamon and bayleaf and sauté on a medium flame for few seconds.
  • Add the rice and salt and sauté on a medium flame for 2 minutes, while stirring continuously. Keep aside.
  • How to proceedIf you want to make spicy pulao, you can just mix rice with Pav Bhaji or you can go little fancy.Divide the rice into 2 equal portions.Arrange one portion of the rice evenly in a greased 125 mm. (5") round aluminium tin and press it lightly using a back of a spoon.
  • Spread the bhaji evenly over the rice and top with the remaining portion of the rice and press it lightly using a back of a spoon.
  • Turn upside down on a serving plate and serve immediately with churi papad.
