I originally submitted this without trying it, as it was in response to a request. I finally got around to trying it last week, and realized there was a mistake, as the ingredients in the cake part should have read: 8 tablespoons butter, melted. Also, you can't "pour" the cake into the pan it has to be patted into the pan like a pie crust. Anyway, here is the revised version. I also cut down on the sugar, using about 12 ounces or 3/4 of the box. This is awesome-a Paula Deen classic!

Ingredients

1 (18 1/4 ounce) package yellow cake mix
1 egg
8 tablespoons butter, melted
1 (8 ounce) package cream cheese, softened
1 (15 ounce) can pumpkin

Steps:

Preheat oven to 350.
To make the cake: Combine all of the ingredients and mix well.
Pat batter into a lightly greased 13x9-inch baking pan with hands into an even layer.
Prepare filling.
To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth.
Add the eggs, vanilla, and butter, and beat together.
Next, add the powdered sugar, cinnamon, nutmeg, and mix well.
Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes.
Make sure not to over bake as the center should be a little gooey.
Serve with fresh whipped cream or cinnamon-flavored ice cream.

Ingredients

3 ¼ cup All Purpose Flour
½ tsp Baking Soda
¼ tsp Salt
¼ cup Butter
2 ½ cup Granulated Sugar
2 tsp Lemon Extract
3 Large Eggs
1 ½ tsp Lemon Rind
¼ cup Lemon Juice
8 ounces Sour Cream
1 cup Powdered Sugar

Steps:

First, set your oven to a temperature of 350 F.
Apply some cooking spray to a 10-inch tube pan.
Take a bowl and add some flour, baking soda, and salt in it and mix it well.
In another bowl, add some butter until it turns fluffy and light in texture.
Add granulated sugar and lemon extract into this mixture and whisk it properly.
Now, add some eggs, one at a time and beat them well. Also, add lemon rind and some lemon juice and whisk it properly.
Now, add this sugar mixture into the flour and add some sour cream as well. Keep beating this mixture at a relatively low speed until the mixture is done completely.
Add this batter into the cake pans and bake it for around 1 hour and 10 minutes.
Keep a check on the oven and if needed, insert a wooden pick at the center of the cake and wit until it pops out.
After the cake is ready, let it cool on the cooling rack. And meanwhile, mix some lemon juice with powdered sugar and drizzle it over the top of the cake.
