Two 12-ounce bags frozen raspberries, thawed (4 cups)
1 1/4 cups seedless raspberry jam
1 cup sugar, plus more for coating
3 envelopes unflavored powdered gelatin (2 tablespoons)
3/4 cup cold water

Steps:

  • Lightly oil an 8-by-8-inch baking dish. Line the dish with a piece of wax paper that extends 4 inches beyond the rim.
  • In a food processor, puree the thawed raspberries with the raspberry jam and the 1 cup of sugar. Strain the puree into a medium saucepan. Boil the puree over moderately high heat, stirring often, until reduced to 3 cups, about 10 minutes.
  • In a small bowl, sprinkle the gelatin over the water in an even layer. Let stand until the gelatin softens, then heat the water in a microwave for 20 seconds, until the gelatin dissolves completely. Stir the melted gelatin into the raspberry puree, then pour the mixture into the prepared dish. Let cool to room temperature, then cover with plastic wrap and refrigerate overnight.
  • Just before serving, unmold the pâte de fruit onto a work surface. Peel off and discard the wax paper. Using a sharp knife, cut the pâte into 1-inch squares or triangles. Spread about 1/2 cup of sugar in a shallow bowl. Roll the pieces in the sugar to coat. Arrange on a platter and serve.

One 15-ounce can apricots in syrup
12 dried apricot halves (4 ounces)
1 1/4 cups apricot preserves
1/2 cup sugar, plus more for coating
2 envelopes unflavored powdered gelatin (4 1/2 teaspoons)
1/3 cup cold water

Steps:

  • Lightly oil an 8-by-8-inch baking dish. Line the dish with a sheet of wax paper that extends 4 inches beyond the rim.
  • Strain the apricot syrup from the can into a saucepan; reserve the apricots. Add the dried apricots to the saucepan and bring to a boil. Reduce the heat and simmer until the apricots are tender and most of the liquid has evaporated, 7 minutes.
  • Transfer the contents of the saucepan to a food processor. Add the reserved canned apricots, the apricot preserves and the 1/2 cup of sugar. Process until smooth. Transfer the apricot puree to the saucepan and boil over moderately high heat, stirring often, until it has thickened and any excess liquid has evaporated, about 8 minutes.
  • In a bowl, sprinkle the gelatin over the water in an even layer. Let stand until the gelatin softens, then microwave the water for 20 seconds to dissolve the gelatin completely. Stir the gelatin into the apricot puree. Scrape the mixture into the prepared dish and smooth the surface. Let cool to room temperature, then cover with plastic wrap and refrigerate overnight.

  • Put the peach slices and caster sugar into a medium pan and purée with a stick blender until completely smooth. Put a sugar thermometer into the pan and cook over low heat until the mixture reaches 110°C (see GH Tips), stirring frequently with a rubber spatula to prevent the mixture catching. Meanwhile line a small square or rectangular baking tin, about 18cm, with with clingfilm (making sure some overhangs the edges to make removal easier).
    Remove pan from heat and stir in the pectin and lime juice. Return pan to heat and cook, stirring frequently with the spatula, until the mixture reaches 110°C. Stir in the lime zest until distributed.
    Scrape mixture into the lined tin and tap firmly on the work surface a couple of times to burst any bubbles. Leave to cool and set, about 2-3hr.
    Using the overhanging cling film, lift out the pâte de fruit and invert on to a board. Peel off clingfilm. Cut into bite-sized pieces with a hot knife (see GH Tips). Working a few at a time, toss the pieces in a bowl of granulated sugar to coat. Place on a wire rack or baking tray lined with baking parchment to dry fully. Serve.
