Smoked Sausage with Pasta Recipe: How to Make It image

Loaded with sausage, mushrooms, tomatoes and basil flavor, this quick recipe satisfies the toughest critics. It's one of my husband's favorite dishes, and he has no idea it's lower in fat. Add a green salad for a delicious meal. —Ruth Ann Ruddell, Shelby Township, Michigan

Number Of Ingredients 10

4 ounces uncooked angel hair pasta
1/2 pound smoked turkey kielbasa, cut into 1/2-inch slices
2 cups sliced fresh mushrooms
2 garlic cloves, minced
4-1/2 teaspoons minced fresh basil or 1-1/2 teaspoons dried basil
1 tablespoon olive oil
2 cups julienned seeded plum tomatoes
1/8 teaspoon salt
1/8 teaspoon pepper
Grated Parmesan cheese, optional

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, saute the sausage, mushrooms, garlic and basil in oil until mushrooms are tender. Drain pasta; add to the sausage mixture. Add the tomatoes, salt and pepper; toss gently. Heat through. If desired, top with additional fresh basil and grated Parmesan cheese.

1 lb.

spaghetti

1/2

red onion, chopped

2

cloves garlic, minced

1/4 c.

white wine

3/4 c.

heavy cream

Juice of 1/2 lemon

Kosher salt

Freshly ground black pepper

1/2 lb.

smoked salmon, cut into bite size pieces

1/4 c.

capers, drained

2 tbsp.

freshly chopped dill, plus more for garnish

Steps:

  • In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain, reserving ½ cup pasta water, and return to pot. In a large skillet over medium heat, heat oil. Add onion and cook until soft, 5 minutes, then add garlic and cook until fragrant, 1 minute more. Add wine and cook until almost completely reduced, 5 minutes. Add heavy cream and lemon juice and cook until thickened, another 5 minutes. Season with salt and pepper.  Add salmon, capers, and dill and cook until salmon is warmed through, 2 minutes, then toss sauce and pasta together. Add ¼ cup pasta water if sauce is too thick. Garnish with more dill to serve.
