This looks like a great pasta to make for ravioli...will be making this soon. Comes from "Vegetarian Gourmet", Spring 1994.

Number Of Ingredients 6

1 small butternut squash
1 3/4 cups all-purpose flour
1 teaspoon hazelnut butter
1 pinch black pepper
1 pinch nutmeg
1 pinch garlic powder

Steps:

  • Preheat oven to 350°F
  • Cut squash into quarters, remove seeds & place in a baking dish with 1/2 c water.
  • Cover & bake til ltender (50 to 60 minutes).
  • Let cool & mash flesh.
  • Set aside.
  • In a large bowl, combine 3/4 c squash with remaining ingredients to form a soft dough. Turn out onto a floured board & knead until smooth & pliable like a firm bread dough. Place in a bowl, cover with plastic wrap & let rest for at least 30 minutes.
  • Shape & cook dough as desired.

An easy pasta dinner with fresh squash and basil that is ready in no time at all!

Number Of Ingredients 8

1 pound farfalle pasta
1/4 cup extra virgin olive oil
1/2 teaspoon minced garlic
1 pound yellow squash, sliced thinly
1/4 teaspoon red pepper flakes
Salt to taste
1/2 cup freshly grated Parmagiano-Reggiano cheese
6 basil leaves, chopped

Steps:

  • In a large pot bring some salted water to a boil. Add the farfalle pasta and cook uncovered over high heat, al dente, according to package directions.
  • While the pasta is cooking, heat olive oil in a large saute pan over medium heat. Add the garlic and cook for 30 seconds to 1 minute. Add the squash, red pepper and salt. Cook until squash starts to soften, around 6-8 minutes.
  • When pasta is done, reserve 1/2 cup of the pasta water, then drain the pasta.
  • Add the pasta, Parmagiano-Reggiano cheese, half of the chopped basil and the reserved cooking water to the pan with the squash. Stir together over the heat until well combined.
  • Transfer the pasta to serving plates. Sprinkle with remaining basil and serve.

  • Preheat oven to 425°. Cut squash into 1/2 “ cubes. In a large bowl toss squash, red onion, and 2 tablespoons oil together.  Divide between two large baking sheets and season with salt and pepper. Roast until fork tender and golden, 30 minutes, tossing halfway through. In a large pot of boiling salted water, cook pasta according to package directions. Reserve ½ cup of pasta water, then drain.  In a large skillet over medium heat, heat remaining 1 tablespoon oil. Add sausage and cook, breaking meat up finely with a wooden spoon, until golden and crisp, about 10 minutes. Remove from skillet and place on a plate to keep warm.  Return skillet to heat and add butter. Cook butter until foamy, then reduce heat to medium-low and continue to stir until butter starts to smell nutty and turns a deep golden, about 4 minutes. Add garlic, sage, and thyme and cook until fragrant, 1 minute, then remove pan from heat.  Add bucatini, sausage, squash, and ¼ cup reserved pasta water to skillet and toss to combine. Add more pasta water to help sauce come together as necessary.  Top with shaved Parmesan before serving.
