Cold Couscous Pasta Salad Recipe - Tablespoon.com image

An easy couscous dish that's served cold to help battle the heat!

Number Of Ingredients 8

2 avocados
2 cups Israeli couscous
1/2 red onion
1 medium tomato
1 medium cucumber
2 lemons (just the juice)
5 tbsp. olive oil
Salt & pepper, to taste

Steps:

  • Cook your couscous according to the instructions on the packet.
  • In the meantime, chop up all your veggies, put them in a large bowl, and pop them in the fridge.
  • When your couscous is done cooking, let it cool for 15 minutes then put it in the bowl where your veggies are.
  • Add the juice of 2 lemons.
  • Drizzle the olive oil on top.
  • Season with salt & pepper, to taste.
  • Gently toss the salad with a spatula.
  • Pop back in the fridge to chill for a couple hours before serving.

2 medium carrots
1/2 cup diced celery
1 medium onion, finely chopped
1/4 cup julienned sweet yellow pepper
1/4 cup julienned sweet red pepper
2 tablespoons olive oil
1 medium zucchini, diced
1/4 cup minced fresh basil or 4 teaspoons dried basil
1/4 teaspoon garlic salt
1/8 teaspoon pepper
Dash hot pepper sauce
1 cup uncooked couscous
1-1/2 cups chicken broth

Steps:

  • In a large skillet, saute the carrots, celery, onion and peppers in oil for 5-6 minutes or until vegetables are crisp-tender. Add the next five ingredients. , Stir in couscous. Add broth; bring to a boil. Cover and remove from the heat; let stand for 5-8 minutes. Fluff with a fork and serve immediately.
