fresh egg penne
tomato and herb pasta sauce
tins tuna steak in springwater, drained and flaked
tin sweetcorn in water, drained
carton Italian chopped tomatoes
fresh flat-leaf parsley, leaves picked, washed and chopped
mature cheddar, grated

Steps:

  • Preheat the oven to 200°C/gas mark 6. Bring a large pan of water to the boil, then add the pasta and cook for 6 minutes. Drain. Tip the cooked pasta back into the pan and stir through the pasta sauce, tuna, sweetcorn, chopped tomatoes and half the parsley.

    Tip the mixture into a 1½-litre baking dish and sprinkle the cheese over the top. Cook for 30 minutes until golden and bubbling. Garnish with the remaining parsley just before serving.

We love a pasta bake and this salmon version is light and creamy at the same time as satisfying, and so easy to make!

Number Of Ingredients 13

1 pack of J James salmon pieces - we used 356g
400g pasta - we used Spirali
2 leeks
2 cloves of garlic - minced
handful of parsley
handful of mint
1 tbsp wholegrain mustard
25g butter
1 tbsp plain flour
250mls milk
3 tbsp yogurt
Salt and pepper
breadcrumbs - or 2 end pieces of bread blitzed up

Steps:

  • Preheat the oven to 180 degrees

    Cook the salmon en papillote, with some olive oil, clove garlic, squeeze of lemon and season with salt and pepper to taste, for 15 minutes

    Boil the pasta for 15 mins until al dente

    Cook the leeks in the butter and garlic, once softened season and add the flour to coat all the leeks

    Add the milk a little at a time until you have a thick creamy sauce, now add the yogurt and mustard along with the parsley and mint and stir well – season well with black pepper 

    Add your cooked pasta to an oven proof dish, then add the salmon layer, flaking across all the pasta removing any bones.

    Now add the creamy leeks over the top covering right to the edges

    Sprinkle over the breadcrumbs and season lightly again

    Put this in the oven until golden brown on top – about 15 minutes should do the trick!

    1. I remember meeting a lovely old couple outside my parents’ pub and when they heard I was going to Italy they told me to make sure I cooked turkey tetrazzini – I hadn’t a clue what they were talking about and then, by chance, I saw a recipe for chicken tetrazzini in an old Italian cookbook and it’s great – really tacky but gorgeous! Here’s my version...
    2. Preheat the oven to 200ºC/400ºF/gas 6. Put your porcini mushrooms in a bowl and pour over just enough boiling water to cover them (approx. 150ml/5½fl oz). Put to one side to soak for a few minutes. Heat a saucepan big enough to hold all the ingredients, and pour in a splash of olive oil. Season the chicken pieces with salt and pepper and brown them gently in the oil. Strain the porcini, reserving the soaking water, and add them to the pan with the garlic and fresh mushrooms. Add the wine, with the strained porcini soaking water, and turn the heat down. Simmer gently until the chicken pieces are cooked through and the wine has reduced a little.
    3. Meanwhile, cook the spaghetti in plenty of boiling salted water according to the packet instructions and drain well. Add the cream to the pan of chicken, then bring to the boil and turn the heat off. Season well with salt and freshly ground black pepper. Add the drained spaghetti to the creamy chicken sauce and toss well. Add three-quarters of the Parmesan and all of the basil and stir well. Transfer to an ovenproof baking dish or non-stick pan, sprinkle with half the remaining cheese and bake in the oven until golden brown, bubbling and crisp. Divide between your plates, drizzle with extra virgin olive oil and sprinkle with the rest of the cheese before serving.

    3. Melt the butter in a frying pan, add the mushrooms and fry them for a minute over a high heat. Put a lid on the pan and cook for 2 minutes to draw out any liquid, then remove the lid and fry for 2 minutes over a high heat to evaporate the liquid. Add the mushrooms and the thyme to the mince, then stir well.

    4. Preheat the oven to 160°C/140°C fan/Gas 3. Cook the pasta in boiling salted water according to the packet instructions – keep it al dente. Drain well and run under cold water. Stir the pasta into the mince, then taste to check the seasoning.

    5. Spoon everything into the ovenproof dish. Sprinkle with both cheeses and bake in the oven for 25–30 minutes until golden and bubbling around the edges. Serve piping hot, with a green or tomato salad.

An easy one-tin pasta bake recipe with roasted aubergine, courgette and creamy Boursin cheese, this makes a great vegetarian comfort food dish. Ready in under an hour, it's perfect for a quick midweek dinner.

  • Preheat the oven to 210°C fan/230°C/gas 8.

    Get a large pan of boiling salted water ready.

    Tip the aubergines, courgettes, sea salt (if using) and 1 tablespoon of olive oil into a large roasting tin, mix well, then transfer to the oven and roast for 10 minutes.

    Meanwhile, tip the pasta into the boiling water and cook for 10 minutes. Drain well, then remove the tin with the aubergines and courgettes from the oven and stir through the pasta, tinned tomatoes and another tablespoon of oil. Reduce the oven temperature to 200°C fan/220°C/gas 7.

    Scatter over the Boursin cheese, then the breadcrumbs. Drizzle everything with the remaining tablespoon of oil, then transfer to the oven and bake for a further 15–20 minutes, until crisp and golden brown. Leave to sit for 5 minutes before serving.
