Number Of Ingredients 4

2 chicken breasts (skinless, boneless) (about 8 oz each)
4 tbsp mayo
1/4 cup parmesan cheese (shredded)
salt & pepper

Steps:

  • Preheat oven to 350°F (180°C)
  • Wash chicken breast under cold running water and pat dry with a paper towel. Season generously with salt and pepper.
  • In a medium-sized bowl, use your hands to cover the chicken breasts with mayonnaise. Make sure the chicken is fully covered in mayo in a nice even layer.
  • Lightly grease a baking dish with some oil and place the chicken breasts into it. Sprinkle equal amounts of shredded parmesan cheese onto each chicken breast.
  • Bake in a preheated oven for 40-45 minutes until the chicken is fully cooked and the parmesan cheese has turned golden brown. (If you have a meat thermometer it should read 165°F at the thickest part of the chicken to make sure it's fully cooked and safe to eat)

We call for chicken breast tenders here to keep things easy, but you can also use skinless, boneless chicken breasts (which are less expensive). Just cut each breast lengthwise into 3 strips. (Cost for 4: $8.61)

Yield Serves 4 (serving size: 2 tenders)

Number Of Ingredients 12

1 ½ ounces all-purpose flour (about 1/3 cup)
3 tablespoons fine-ground cornmeal
1 ounce Parmesan cheese, finely grated (about 1/4 cup)
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon black pepper
¼ teaspoon salt
½ cup nonfat buttermilk
1 large egg, lightly beaten
8 chicken breast tenders (about 1 1/4 pounds)
1 ½ tablespoons canola oil
Cooking spray

Steps:

  • Preheat oven to 425°. Combine first 7 ingredients in a medium shallow dish.
  • Combine buttermilk and egg in another shallow dish.
  • Dip chicken in buttermilk mixture.
  • Dredge chicken in flour mixture.
  • Heat a large nonstick skillet over medium-high heat. Add oil; swirl to coat. Add chicken to pan; cook 3 minutes on each side or until browned.
  • Transfer chicken to a baking sheet coated with cooking spray. Bake at 425° for 5 minutes or until chicken is done.
  • 3 Ways to Riff: • Cut chicken into bite-sized pieces for nuggets. • Use skinless, boneless chicken thighs, cut into strips, for richer flavor. • Try the breading on tilapia for homemade fish sticks.

Dredge each chicken breast on all sides with flour mixture. Set aside. In a large skillet over medium-high heat, heat oil until shimmering but not smoking. Add chicken and sear until golden, 6 minutes. Flip and cook until opposite side is golden, around 6 minutes more. Remove from pan and set aside. Turn heat down to medium and add butter to pan. When butter is melted add garlic and cook until fragrant, about 1 minute. Add spinach and cook until wilted, 1 to 2 minutes. Add chicken broth, cream, and remaining 1/2 cup Parmesan and season with more salt and pepper. Stir to combine. Add lemon slices and bring to a simmer and cook until thickened slightly, 3 to 4 minutes. Return chicken to skillet and simmer until chicken is cooked through, 5 to 6 minutes more. When chicken is cooked, remove skillet from heat and garnish with basil before serving.

  • Pat the chicken wings dry with paper towels. Line 2 rimmed baking sheets with aluminum foil and top each with a wire rack. Spray the racks with nonstick cooking spray. 
    Stir together the salt, baking powder, and garlic powder in a large bowl. Add the chicken wings and toss until evenly coated. Divide the wings evenly between prepared racks, leaving space between each wing. Let stand at room temperature for 1 hour or refrigerate, uncovered, for up to 24 hours.  
    Preheat the oven to 450°F with racks in the upper and lower thirds of the oven. If the wings were refrigerated, let stand at room temperature for 30 minutes. Bake the wings for 25 minutes. Flip the wings over and rotate the baking sheets from upper and lower oven racks. Continue baking the wings until crispy and golden, 25 to 30 minutes.  While the wings are baking, process the Parmesan in a food processor until finely ground, 30-45 seconds. Reserve 2 tablespoons of the Parmesan for garnishing. Transfer the remaining Parmesan to a large bowl and stir in the butter, garlic red pepper flakes and lemon juice.  Transfer wings to the bowl with the butter mixture and toss to coat. Transfer the wings to a serving platter. Sprinkle with reserved Parmesan and garnish with chives.
