Not just for Christmas. Good enough to eat from the bowl as a snack, these roast sprouts are so moreish we reckon they’ll convert the haters! Make them into a vegetarian main by stirring through some cooked quinoa or bulgur wheat.

1 kg Brussels sprouts
2 tablespoons extra virgin olive oil
1 lemon
1 teaspoon chilli flakes
4 tablespoons freshly grated Parmesan or vegetarian hard cheese

Steps:

    1. Preheat the oven to 220ºC/gas 7.
    2. Trim and halve the brussels sprouts, then place on a large baking tray. Add the oil, grate over the lemon zest, then sprinkle with the chilli flakes and a pinch of sea salt and black pepper. Mix with your hands to coat.
    3. Roast in the oven for 10 minutes – the sprouts should start to caramelise in places; when that happens, scatter over the Parmesan and roast for a further 15 minutes, until the cheese is crisp and golden brown, and the sprouts tender.

cooking spray
1?½ pounds fresh Brussels sprouts, trimmed and halved
2 tablespoons olive oil
½ cup shredded Parmesan cheese
¼ cup dry bread crumbs
1 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet with cooking spray.
  • Combine Brussels sprouts and olive oil in a large resealable plastic bag and shake to coat. Add Parmesan cheese, bread crumbs, garlic powder, salt, and pepper to the bag; shake to coat. Spread Brussels sprouts in an even layer on the prepared baking sheet.
  • Bake in the preheated oven until Parmesan cheese is melted and the Brussels sprouts are lightly browned, 15 to 17 minutes.
