You need just five ingredients for this goof-proof way to keep oven-baked fish moist. My mom is one of the best cooks in the world, and she shared this recipe with me years ago. I've been loving it ever since. —Mary Jo Hoppe, Pewaukee, Wisconsin

4 cod fillets (4 ounces each)
2/3 cup mayonnaise
4 green onions, chopped
1/4 cup grated Parmesan cheese
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 400°. Place cod in an 8-in. square baking dish coated with cooking spray. Mix remaining ingredients; spread over fillets., Bake, uncovered, until fish just begins to flake easily with a fork, 15-20 minutes.

1 lb Cod Fillet
2 tb Flour
2 tb Cornmeal
1/2 ts Onion salt
1/8 ts Black Pepper ground
2 tb Butter or margarine
2 tb Grated Parmesan cheese

Steps:

  • "Rinse fish and pat dry. In shallow dish, combine flour, cornmeal, onion salt, and pepper; set aside. Melt butter in shallow dish. Roll cod in butter, then in flour mixture. Place fillets in 8-inch square baking dish. Drizzle remaining butter over fillets and top with grated Parmesan cheese. Bake in a 450 degree oven for 12 to 14 minutes or until cod flakes easily when tested with fork. NOTES : Bake tender, delicate cod in a crisp crust of Parmesan for a family favorite.
