Spinach-Parm Casserole Recipe: How to Make It image

For those who ignore Popeye and won’t eat their spinach, I find that spinach with garlicky butter and Parmesan helps change their minds. —Judy Batson, Tampa, Florida

2 pounds fresh baby spinach
5 tablespoons butter
3 tablespoons olive oil
3 garlic cloves, minced
1 tablespoon Italian seasoning
3/4 teaspoon salt
1 cup grated Parmesan cheese

Steps:

  • Preheat oven to 400°. In a stockpot, bring 5 cups water to a boil. Add spinach; cook, covered, 1 minute or just until wilted. Drain well., In a small skillet, heat butter and oil over medium-low heat. Add garlic, Italian seasoning and salt; cook and stir until garlic is tender, 1-2 minutes., Spread spinach in a greased 1-1/2-qt. or 8-in. square baking dish. Drizzle with butter mixture; sprinkle with cheese. Bake, uncovered, until cheese is lightly browned, 10-15 minutes.

Freshly ground black pepper

12 oz.

fresh or frozen breaded chicken, cooked according to package instructions and diced

bell peppers, halved and seeds removed

1/2 c.

Swanson Chicken Broth

Steps:

  • Preheat oven to 400º. In a large bowl, combine 2 cups mozzarella, Parmesan, garlic, marinara, parsley, and red pepper flakes and season with salt and pepper. Stir until combined, then gently fold in chicken. Spoon mixture into halved bell peppers and sprinkle with remaining 1 cup mozzarella. Pour chicken broth into baking dish (to help the peppers steam) and cover with foil. Bake until peppers are tender, 55 minutes to 1 hour. Uncover and broil 2 minutes. Garnish with parsley and more Parmesan before serving.

Turn off heat. Top each meatball with a whole basil leave, folded, and pierce with a toothpick to serve.
