Salmon cooked en papillote, which means wrapped in a packet of parchment (or foil), is a dramatic way to procure perfectly cooked salmon, but it isn’t difficult. Fold a fillet into a cut piece of parchment, and then layer it with seasonings or perhaps vegetables or citrus fruit. Then simply bake the packets until done. The steam created by the parchment produces reliably moist salmon, and opening the individual packets at the table makes for a fun way to start dinner.

4 (6- to 8-ounce) skin-on salmon fillets
Cut vegetables, fresh herbs and/or slices of lemon, lime or orange
Salt and pepper

Steps:

  • Heat the oven to 400 degrees. Cut 4 large heart-shaped pieces of parchment paper or foil, and place them on a sheet pan. Fold the parchment or foil in half down the middle, place a fillet with its garnishes and seasonings on one side of each, fold the other side over and crimp the rounded edge tightly closed.
  • Place in oven for 10 to 15 minutes, depending on how done you’d like to serve the salmon. The packages should puff up and make for dramatic serving.

How to Make the Best Baked Chicken with Parchment Paper image

1 pound of boneless, skinless chicken breast
2 minced garlic cloves
Salt
Pepper
Cooking spray
½ tsp of oregano, dried
½ tsp of garlic powder
½ tsp of Italian seasoning
1 tbsp of butter
Parchment paper

Steps:

  • To make baked boneless chicken breast with parchment paper, start by preheating your oven to 400 degrees Fahrenheit.
  • Use the cooking spray to grease a baking dish. A dish that is at least 9x13 should work fine. Place chicken breasts on the dish with some space between each one and rub them down with minced garlic. You can also season your chicken on both sides with garlic powder, salt, pepper, Italian seasoning, and oregano.
  • Divide the butter into small pats and place one on each chicken breast. This helps with lubrication and keeps the chicken moist and tender.
  • Cover the chicken with parchment paper, using one sheet for each piece of chicken. Tuck the edges of the paper under the chicken. Make sure the chicken is nice and snug.
  • Bake the chicken for 30 minutes. You can check to see if the chicken has fully cooked by sticking it with a thermometer. Be sure to plunge the thermometer into the middle of the chicken for an accurate reading. The internal temperature should read at least 165 degrees Fahrenheit.
  • Serve the chicken immediately or let it cook all the way down and then store it in the fridge for as long as five days. This recipe makes the best baked chicken breast ever. Cover with parchment paper, remember, and then tuck that tight for a nice fit that traps the juices inside. This is crucial if you are going to get soft and juicy chicken.

  • Update! Newest Version: When I am in a hurry, and we need potatoes really fast for a meal, I zap a large potato with peeling on in the microwave until almost done, then I cut it into chunks. I use a cast iron skillet and put olive oil in it, not much, put in the taters and season them with the same seasonings as the fries (except the Parmesan cheese because it scorches). As soon as they are nicely browned, I remove them to a stainless steel bowl (it keeps them hot) and toss them with the Parmesan cheese. Voila! You have delicious "roasted" potatoes with your meal. Great with bacon and eggs, too!
