1 tablespoon salt
1 cup long- or short-grain brown rice

Steps:

  • In a large pot, bring to a boil 2 to 3 cups of water and the salt. Add rice and boil for about 15 minutes, stirring occasionally. Drain. Refrigerate if it will be more than a couple of hours before you use it.

Number Of Ingredients 9

1/2 cup uncooked brown rice
2 teaspoons olive oil
1/3 cup chopped yellow onion
1/4 cup chopped carrot
2 teaspoons minced garlic
2 tablespoons chopped fresh flat-leaf parsley
2 teaspoons grated lemon rind
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Cook rice according to package directions, omitting salt and fat. While rice cooks, heat oil in a large nonstick skillet over medium. Add onion and carrot; cook, stirring occasionally, until tender, about 5 minutes. Add garlic; cook until fragrant, about 1 minute. Remove from heat; stir in parsley, rind, salt, and pepper. Place cooked rice in a large bowl, and fluff with a fork. Add onion mixture, and stir to combine.
