Turkey Vegetable Soup Recipe - Food Fanatic - Recipes ... image

Turkey Vegetable Soup can be made with the leftover Thanksgiving turkey and vegetables. Freeze a batch to warm up later!

Number Of Ingredients 11

1 tablespoon olive oil
1 small onion, peeled and diced
1 large carrot, peeled and chopped
2 stalks celery, chopped
6 cups turkey stock, chicken can be substituted
1 large potato, peeled and chopped
1 teaspoon dried thyme
2 tablespoons tomato paste
3 cups cooked leftover turkey, chopped
10 ounces frozen mixed vegetables, 1 package
salt and pepper, to taste

Steps:

  • In a large sauce pan, heat the olive oil on medium high heat. Add the onions, carrots and celery. Sauté on medium heat for a few minutes or until vegetables are wilted. Add broth or stock and potatoes to the pot. Bring to a simmer and reduce heat to low. Add thyme, tomato paste and turkey. Cover with lid and simmer for 15 minutes. Add frozen vegetables and cook another 10 minutes or until vegetables are tender. Season with salt and pepper to taste.

Number Of Ingredients 13

1-1/2 pounds ground beef
2 cans (15 ounces each) tomato sauce
1/4 cup chopped onion
2 teaspoons sugar
2 teaspoons salt
2 teaspoons Worcestershire sauce
1/2 teaspoon garlic salt
2 packages (8 ounces each) cream cheese, softened
1 cup sour cream
1/4 cup milk
12 lasagna noodles, cooked and drained
1 cup shredded cheddar cheese
Optional: minced fresh parsley and crushed red pepper flakes

Steps:

  • In a skillet, cook beef over medium heat until no longer pink; drain. Stir in tomato sauce, onion, sugar, salt, Worcestershire sauce and garlic salt. In a bowl, beat cream cheese, sour cream and milk until smooth. , In a greased 13x9-in. baking dish, layer a third of the meat sauce, four noodles and a third of cream cheese mixture. Repeat layers twice. , Cover and bake at 350° for 40 minutes. Uncover; sprinkle with cheddar cheese. Bake 5 minutes longer or until cheese is melted. Let stand 15 minutes before cutting. If desired, sprinkle with minced parsley and red pepper flakes.

  • Preheat oven to 350°F. Lightly grease a 13x9 pan; set aside. In a large bowl combine the potatoes, sour cream, onion, cream soup, 1 ½ cups cheese, butter, salt and pepper. Mix well and taste for additional salt and pepper if necessary. Spread into prepared pan and bake uncovered at 350°F for 45 minutes. Remove from oven and top with remaining ½ cup of cheese. Bake for an additional 10 minutes, or until golden and bubbly.
