Let the oven do all the hard work with this simple chicken traybake recipe.

4 large ripe tomatoes
2 red onions
1 red pepper
1 yellow pepper
6 free-range chicken thighs skin off, bone out
4 cloves of garlic
½ a bunch of fresh thyme
1 teaspoon smoked paprika
olive oil
2 tablespoons balsamic vinegar

Steps:

    1. Preheat the oven to 180ºC/350ºF/gas 4.
    2. Quarter the tomatoes and place them in a large baking dish or roasting tray (roughly 25cm x 30cm). Peel the onions and cut into large wedges, then deseed and roughly chop the peppers. Add all these to the tray along with the chicken thighs.
    3. Squash the unpeeled garlic cloves with the back of your knife and add to the tray, then pick over the thyme leaves and sprinkle over the paprika.
    4. Add 2 tablespoons of oil, the balsamic and a good pinch of sea salt and black pepper. Toss everything together really well to coat, then spread across the tray, making sure the chicken isn’t covered by the vegetables.
    5. Roast for around 1 hour, or until the chicken is golden and cooked through, turning and basting it a couple of times during cooking with the juices from the tray.
    6. Serve the traybake with a lovely green salad on the side. You could also buddy it up with a little rice, polenta or a loaf of crusty bread to mop up the juices.

This is a simple chicken stew that packs in a lot of flavour. Peppers, butter beans and smoked paprika give this dish a Spanish feel. Each serving provides 313 kcal, 35g protein, 22g carbohydrate (of which 14g sugars), 8g fat (of which 1.5g saturates), 9g fibre and 0.4g salt.

1 tbsp vegetable oil
1 onion, roughly chopped
2 garlic cloves, crushed or finely grated
2 red peppers, seeds removed, roughly chopped
1 tbsp smoked paprika
1 tbsp tomato purée
7 chicken thigh fillets, boneless, skin removed and halved
2 x 400g tins chopped tomatoes
400g tin butter beans, drained and rinsed
1 unwaxed lemon, finely grated zest only
2 tbsp roughly chopped fresh flatleaf parsley
salt and freshly ground black pepper

Steps:

  • Heat the oil in a casserole dish and fry the onion for 3–4 minutes, until just softened. Add the garlic and peppers and cook for another 2 minutes, then stir in the smoked paprika and tomato purée and cook for another minute.
  • Push the onion and pepper mixture to one side, then fry the chicken thigh pieces in the rest of the pan for 2–3 minutes to colour slightly then mix everything together. Add the tomatoes and butter beans and season with salt and pepper. Cover with a lid and simmer for 20 minutes, or until the chicken is cooked and the vegetables are tender.
  • Stir the lemon zest and half the parsley into the stew. Scatter over the remaining parsley to serve. This is great with mashed potato, but would also work with rice or pasta on the side.

    Tip it out of the tin and slice your shawarma. We like to eat this piled into flatbreads with the slaw. Any leftovers can be kept in the fridge, or frozen for the next time you need your shawarma fix.

  • Start by marinating the chicken tikka. Put the chicken in a non-reactive bowl and rub in the salt and lemon juice. Prod the chicken pieces lightly with the tip of a knife and rub the seasonings in again, then set aside for 20 minutes. Add the ginger, garlic, cumin, paprika, chilli powder, cream and garam masala. Mix well, cover, and refrigerate for six to eight hours (longer will not hurt).

    When you’re ready to cook, make the masala: pour the 4 tablespoons of oil into a large, preferably non-stick, lidded pan and set it over a medium-high heat. When the oil is hot, put in the onions. Stir and fry until they brown, six or seven minutes. Add the ginger and garlic and continue to fry, stirring, for a minute. Add the ground coriander, turmeric, chilli powder and paprika. Stir for 10 seconds, then add a tablespoon of the yoghurt. Stir and fry until it is absorbed. Add the remaining yoghurt in this way, a tablespoon at a time.

    Now put in the tomatoes. Fry them for three or four minutes, or until they turn pulpy. Add the stock and salt, and bring to a simmer. Cover, reduce the heat to low, and simmer gently for 15–20 minutes. The sauce should turn thick. Stir in the garam masala and coriander leaves, taste for balance of seasonings and add more salt if you need it.

    Shortly before you eat, preheat the grill to its highest setting. Thread the chicken on to two to four skewers (the flat, sword-like ones are best). Brush with the 3 tablespoons of oil and balance the skewers on the rim of a shallow baking tray, so that the meat is suspended and does not touch the tray. Place about 13 centimetres (5 inches) from the source of heat and grill for six minutes on each side, or until lightly browned, cooked through and charred in places. (Cut a large piece of chicken to the centre to check there is no trace of pink.)

    When the tikkas are cooked, reheat the sauce and fold in the chicken. Serve immediately.
