Simple, delicious homemade bread! Great for kids who are anxious to help out with dinner. Simply 'squish' ingredients in a large resealable bag before lightly kneading and baking!

Number Of Ingredients 7

3 cups all-purpose flour, divided
3 tablespoons white sugar
1 (.25 ounce) package rapid rise yeast
1 cup warm water
3 tablespoons non-fat dry milk
3 tablespoons olive oil
1?½ teaspoons salt

Steps:

  • In a large resealable freezer bag, combine 1 cup of flour, sugar, yeast and warm water. Squeeze most of the air out of the bag, and seal. Squish with your hands until the well blended. Set aside to rest for 10 minutes at room temperature, or until bubbles appear.
  • In a separate bowl, stir together 1 cup of flour, dry milk, oil and salt. Pour into the resealable bag and squeeze out most of the air. Seal, and squish until well blended. Add the last cup of flour to the bag, and continue mixing in the same manner until well blended.
  • Remove the dough from the bag, and place on a floured surface. Knead for 5 to 8 minutes. Form into a small loaf, and place in a greased 8x4 inch loaf pan. Cover with a towel, and allow to rise for about 30 minutes, or until your finger leaves an impression when you poke the top of the loaf gently.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bake the bread for 35 minutes in the preheated oven, until golden brown.

This is the Italian answer to fruitcake. A lovely textured, citrus infused fruitcake or bread that will satiate an appetite for something sweet and delicate to accompany tea or coffee. For this recipe you will need 3 (3 1/4x7 inch baking-safe paper bags. Be sure to use paper bags that are intended for baking. The lunch bags sold in most grocery stores are unsafe to use!

? cup warm water (110 degrees F/45 degrees C)
2 (.25 ounce) packages active dry yeast
4 cups all-purpose flour
½ cup warm milk
? cup white sugar
4 eggs
2 egg yolks
1 teaspoon vanilla extract
12 tablespoons unsalted butter
2 cups candied mixed fruit
2?½ teaspoons grated lemon zest
2 tablespoons orange zest
2 tablespoons butter, melted
1 egg yolk
1 tablespoon cream

Steps:

  • To make sponge, warm a small bowl by rinsing it with hot water. Pour in warm water and sprinkle 1 package yeast on it. Let stand until yeast has dissolved. Stir in 1/2 cup flour, cover with plastic wrap, and let stand 30 minutes, or until doubled. Sprinkle remaining yeast over warm milk. Let stand until dissolved. Beat together sugar, eggs, egg yolks, and vanilla. Stir in milk-yeast mixture. Add sponge and stir until well incorporated.
  • Combine butter and remaining 3 1/2 cups flour until crumbly. Slowly pour in egg mixture and beat on high speed 3 to 4 minutes, until dough is elastic looking and long strands form. Beat in fruit and zests. Turn dough into oiled bowl, cover with plastic wrap, and leave in a warm place to rise until doubled, about 2 to 3 hours.
  • Fold down bags to form a 3-inch cuff. Brush inside and out with melted butter. Turn out dough onto a lightly floured work surface and knead a few times to deflate. Divide dough into 3 pieces. Roll each piece into a ball and drop into prepared bags. Place bags on a baking sheet about 4-inches apart and cover loosely with plastic wrap. Let rise in a warm place until doubled again, about 2 hours.
  • Heat oven to 400 degrees F (200 degrees C). Cut an X in top of each loaf with oiled scissors. Combine egg yolk with cream. Brush tops of loaves lightly with egg wash.
  • Place baking sheet in bottom 1/3 of oven. After 10 minutes, lower heat to 375 degrees F(190 degrees C). Bake for 30 more minutes; if tops get too brown, cover with foil. Loaves are done when a wooden skewer inserted into centers comes out clean. Cool on wire rack.

Campfire cooking When I served honorably and proudly in the Boy Scouts of America, during WWll we mixed this up in a paper bag and toted it in our ruck sacks when out camping and cooked it over a fire (coals) on a stick. a "dough god" is bread dough wrapped around a stick and cooked on a "spit", that is a stick over the coals. Cast iron dutch ovens were too heavy to pack around in a ruck sack. Of course we didn't have dry milk in those days so we packed canned milk and diluted it with water from our canteens. One can mix this in a paper bag with the water/milk mixture. you don't need a bowl. just don't put too much water/milk mixture in the bag, if you do it right, you have a ball of very sticky dough in the bottom of the paper bag that will adhere to the spit/stick. Fold the sides of the sack down before you start the mixing process. When I say I served honorably and proudly, as Boy Scouts we volunteered for the Civilian Defense Corp as airplane spotters. And I'm proud to report that not one enemy aircraft got beyond Dorena, Oregon on my watch.... Sweet Bannock: Same recipe as bannock only add 1/4 cup sugar and a hand full of raisons....
