Lots of different red sauce recipes out there; this one is superb. Been in the family for over 50 years. If you call your red sauce gravy, you gotta try this! Never understood why my grandpa does, but he is insistent. This recipe also freezes well, so feel free. To defrost, the sauce must thaw for about 6 to 8 hours and reheat in a pot.

2 teaspoons olive oil, or as needed
1 sweet onion, diced
6 cloves garlic, minced
6 (28 ounce) cans Italian-style peeled tomatoes (such as Cento® San Marzano)
2 tablespoons chopped fresh oregano
1 tablespoon salt, or to taste
1 tablespoon ground black pepper, or to taste
10 leaves fresh basil

Steps:

  • Pour just enough olive oil into a large pot to coat the bottom; place over medium heat. Cook and stir sweet onion in the pot until it releases some moisture, 1 to 2 minutes. Stir garlic with the onion; cook another 1 minute. Remove pot from heat immediately.
  • Process the tomatoes in a large food mill using medium holes; grind directly into the pot. Bring the tomato mixture to a light simmer over medium-low heat; season with oregano, salt, and pepper. Allow the mixture to simmer 1 hour, stirring regularly.
  • Stir basil leaves into the sauce. Simmer 1 hour more, again stirring regularly.

1½ cups whole wheat flour
1 cup plus more for kneading all-purpose flour
2 tbsp granulated sugar
2¼ tsp active dry yeast
1 tsp cream of tartar
1 tsp baking soda
½ tsp salt
3 tbsp divided into thirds olive oil
1¼ cup warm water
¾ tsp Italian Seasoning
¼ tsp lemon or lime juice
1 cup tomato sauce
2 pieces removed from its casing, crumbled Italian sausage
½ cup shredded or powdered parmesan cheese
½ cup preferably fontina, asiago & provolone, shredded 3-cheese blend of your choice
½ cup cooked chopped bacon
14 slices pepperoni
pinch garlic powder

Steps:

  • In a bowl, add the warm water and yeast.
  • Stir and let the mixture bloom, until the yeast turns foamy and dissolves.
  • Sift together both flours, baking soda, cream of tartar, sugar, & salt.
  • Add the bloomed yeast into the sifter flour mixture. Mix all the ingredients together by hand or with a mixer at low speed until the dough begins to form.
  • Once the dough is smooth and well combined, dust the work area with additional flour & knead the dough by hand for about 10 minutes. Add more flour as needed.
  • Once the dough becomes elastic and bouncy, roundly shape it and put it in a greased bowl with olive oil.
  • Drizzle some olive oil over the dough, cover it, and allow it to rise for one hour.
  • After an hour, the dough will appear to have expanded in size. Poke the middle to release the extra air.
  • Grease a 12-inch pizza pan, and dust it with some flour to prevent the dough from sticking.
  • Press out the dough onto the greased pizza pan, & prick around the dough with a fork.
  • Transfer the pizza dough to a warm area & allow to rest, about 10-15 minutes covered.
  • Preheat the oven to 450 degrees Fahrenheit.
  • Brush the pizza dough with the remaining olive oil, & pre bake them for about 5 minutes.
  • Combine the tomato sauce into a bowl with the Italian Seasoning and lemon juice.
  • Spread the tomato sauce evenly on the pizza dough, leaving a 1 inch border all around the dough.
  • Sprinkle the parmesan cheese and 3-cheese blend generously all over the tomato sauce.
  • Once you're done with the previous step, toss in the sausage and bacon and add the Italian sausage. Afterward, sprinkle the cooked pepperoni over the dough.
  • Place the pan with the dough in the oven and let it bake for about 10-15 minutes. When the crust appears golden brown and the cheese fully melted, remove and scatter the garlic powder around the pizza.
  • Cool the crusts for one minute. Once they're cool enough, cut them evenly and serve.
