My husband brought the recipe for some chicken he had at the Superbowl party yesterday.He said the lady who made it had copies along side the chicken. He said they were very good,"but not as good as yours honey" He said there was sweet chili sauce and a dillweed sauce to go with the chicken.

- 4 boneless,skinless chicken breasts
- 1 c flour
- salt and pepper,to taste
- garlic powder
- 2 eggs
- 1 tablespoon water
- 1 1/4 c seasoned bread crumbs
- butter
- canola oil

Steps:

  • Pound the chicken breasts until they are 1/4-inch. Combine the flour,1 t.salt,1/2 t.pepper and 1 1/2 t.garlic.Beat the eggs,1 t. salt,1/2 t. each pepper and garlic powder.Coat the chicken on both sides with the flour mixture,then dip into egg mixture and dredge in the bread crumbs pressing lightly. Heat 1 tablespoon butter and 1 tablespoon oil in a large sauté pan and cook 2-3 chicken breasts on medium-low heat for 2-3 minutes on each side,until cooked through. Add more butter and oil and cook remaining chicken breasts.

1 pound boneless skinless chicken breasts
1 egg
1 cup panko crumbs
½ teaspoon Spice Islands® Fine Grind Sea Salt
¼ teaspoon Spice Islands® Fine Grind Black Pepper
½ teaspoon Spice Islands® Garlic Powder
½ teaspoon Spice Islands® Onion Powder
¼ cup Mazola® Corn Oil

Steps:

  • Pound chicken breasts, one at a time in a resealable freezer bag, until about 1/2-inch thick. Lightly beat egg in a shallow bowl. Combine panko crumbs, salt, pepper, garlic powder and onion powder in a separate shallow bowl. Dip chicken breasts in egg until coated, drip off excess and dip in panko mixture. Press chicken into crumbs until fully coated.
  • Heat oil in a large skillet on medium high heat. Transfer chicken to pan and cook about 2 to 3 minutes per side or until chicken is brown, crispy and fully cooked.

I was in shock to find no recipes for paneed chicken in here! In New Orleans "Paneed" mean pan fried. It's usually chicken coated in bread crumbs and seasonings that is pan fried and served with pasta alfredo. This recipe is one I found from Bon Appétit, September 1995. I have however tweaked it and made it a little more to my tastes.
